I’m not sure what I was thinking when I set out to make this, especially with a newborn and a toddler running around. But man did it pay off! I thought it was going to take a long time to cook, but I spent maybe 40 mins actively doing things. The chick peas were a great snack for said toddler and it felt like magic to put everything together in the pot at the end. Another 10/10 from my otherwise picky eater family. This is going to become a regular dish!

So I made this dish yesterday. Started cooking with a clean kitchen at 315, prep work went on forever finally served ar 7 pm.. The final step of having the base come out not mushy and not dry was nail biting. But at the end my family loved it and my daughter in law asked for the recipe. I will be making more of your dishes. Haha that's the issue with koshsri, it takes so long and uses up every pot. It definitely is worth the effort though, my rule is someone who wasn't cooking does the washing. I know right, but I'm happy it turned out good. Glad to hear everyone liked it and I hope you try more of the recipes.

For the onions, after I chop them, i mix them with one table spoon all purpose flour and it comes our crunchy, no extra effort, just keep it on low heat

It's really rare-nearly impossible honestly- to find a real authentic recipe from non locals..most of what I found end up being something similar or a modified version but not the same thing As an egyptian living in Egypt this is 100% authentic and original with all the tips and secrets our mothers use. I went to Egypt for a 4 months Internship 5 years ago and used to eat koshary almost every day. It’s was cheap, a great source of veggie proteins and delicious. I missed it very much when I came back home, in Brazil, and it was a disaster when I tried to cook it at home, mostly because I didn’t find a good recipe on the internet. I’m gonna try your recipe because it looks delicious!

Yeah koshari is so insanely cheap but such a great meal. I think quality tends to differ from vendor to vendor in Cairo, but this recipe is amazing every time. Like you said it's a lot of work, but it reheats great and if you could get some friends together, it makes a good sharing dish. Thanks for watching. Yeah! Our other go to good was shawarma from a place called Baraka on Zamalek. It had toum on it, which I've only had a couple times in the US, but the toum was what made it so good.

I think part of the difficulty in replicating the dish is you honestly need that greasy, grimy Cairo kitchen that's had about 1000 tons of oil fried in it and about 10000 tons of salt poured over it for that just eight taste! Love this channel!

ok so I don't have the time yet to make the full dish but I made the tomato sauce and the chickpeas and ate them over rice and it was soooooo tasty! can't wait until I can make the whole thing one day :) also I love how you split the video up into chapters with timestamps in the description, makes it so easy to flip back and forth between sections for easy reference. love this channel!!

You can try popular Indian dish "chhole chawal" (meaning "chick peas dish served with steamed rice") or "rajma chawal" (meaning "kidney beans dish served with steamed rice"). These are very delicious dishes and a great vegetarian/vegan option

Thank you, Thank you. Thank you! I visited the Middle East for 6 months in 2000. I ate a whole lot of Koshari on the Red Sea coast and all around Egypt. It was cheap, filling, delicious and so very memorable. I wish there was a place in my hometown, of Vancouver, Canada, where I could easily get some authentic Koshari to go but there is not (I don't have a car). Now I can make this amazing dish whenever I want I just won't have the company of Egyptian women and kids whilst I eat it. As a vegan I already have all of the ingredients and will certainly make it soon. Bless you and all your family and friends! I found this recipe just a few days after Eid al-Fitr 2021. Thanks again!

But maybe I will do a video too :) I make only gluten free vegan dishes so I made some slight alterations like using gluten free capellini noodles broken up instead of vermicelli etc. This is such a great filling recipe more Vegans should know about it. Also I'm not gonna lie I only made one of the tomato sauces not both , LOL :)

I have watched so many koshari recipes online and this is the most authentic one by far. People don't realize how you have to season and take your time with each component like you did in this video. So many other bad recipes don't properly season anything but the sauce. it's upsetting. thank you for sharing Egyptian food properly with others

I just found this channel today and I am so pleased! I like that you are actually showing layers to recipes, sauces that can be used for other things, and sharing useful techniques. Stupidly, I had never thought to cut an onion in half before peeling... huh. Your videos are getting me excited about food again. I've been so bored with cooking lately. Thanks for the suggestion, my only issue with the cornflour is that some of it will remain in the oil, and when it's used in the rice will cause it to be a bit gloopier. But if you are just making them alone then it's a good idea.

Wow, never knew koshari evolved out of the Indian dish 'kichdi'. My Egyptian friend made it once, It reminded me of a familiar taste but couldn't recognize it. Loved it!

To many people this will not look appetising. However, I promise you, big promise this is utterly delicious and full of flavour. It’s incredibly cheap to cook and, once you’ve cooked it once, it’s not complicated. Love your videos and the authenticity of your dishes.

I've heard about this dish from an Egyptian classmate just this morning and I'm very curious about it. Being Italian, I'm a bit suspicious about the mix of pasta + rice (the mere idea can make an Italian brain explode), but she was talking about it with such a sincere delight that I'm definitely going to try it. I mean, if so many people like it, it must be good :D Thank you for the detailed recipe! (BTW, as a "pasta expert", I confirm what you said: usual dried pasta doesn't have eggs, so it's vegan friendly. The pasta with eggs is called "pasta all'uovo", can be fresh or dried and eggs must be listed in the ingredients )

I'm confident that you will enjoy it a lot. It's probably very different from anything you've had before, but in a good way. Please report back and let me know how you find it. In the UK nearly all dry pasta is eggless and fresh pasta has eggs like you mentioned. Same in the middle East too.

The tomatoes and the crispy fried onions will make this dish so appealable to American taste. We need more lentils in our western diet. America needs to learn from the rest of the world. Thank you for sharing bra!

Absolutely the most amazing dish I've ever eaten! The recipe is perfect. I didn't make the 2nd spicy tomato sauce but everything else was pretty much the same - I can't stop eating it! Thanks for the thorough explanation.

Wow this is definitely batch cooking at it finest. I need to try a version of this for the family I nanny for. They love beans and lentils. Especially for the young lady who is vegetarian. I used to live in the M E and traveled to Egypt many times; I remember buying koshri outside the Khan a Khalili bazaar in Cairo - it was 1 LE back then! This is a great side dish to take to a BBQ or potluck here in USA; everyone loves it and probably has never had it before

I have had egyptian kushari when I was a kid while traveling with my family. Hands down one of the most delicious meals that I remember 30 years later
