This is a holy grail of a chicken dish. My added mods. 1. Large stuffing mushrooms. 2. Used two shots of brandy instead of wine. 3. Four (4) large cloves garlic. 4. Skipped Chinese sauce. 5. One small minced scallion

Nice recipe Sam! The Family LOVED IT! I added a slight twist by cutting a garlic clove in half and adding them to either side of the chickn face down. After chicken cooked I squeezed the roasted garlic paste into the pan added some flour and a cup of chicken broth to create a nice sauce for the chicken. Thanks for continuing to deliver great recipes combined with humor. Cheers!

I took a deceased microwave & tore it down for the parts (the massive magnets in the magnetron unit & the *heavy* copper in the power transformer), and while in there removed the little pancake motor from the turntable-- made my own turning display (they usually turn at @ 6 rpm....)!!

I took my teenage son to getvthe ingredients for this recipe. He said " it doesn't matter how you make this chicken all roasted chicke tastes the same" I cooked it and at dinner he said " I was wrong. This is the best chicken I've ever had" as he proceeded to get another piece. 🙂

After you salt the bird, let it sit in the fridge for 24 hours to dry out the skin. Best crispy skin after roasting. Dry brining is awesome!!

So, I tried this myself, and the chicken was good ( I generally like lemon garlic chicken). I did the potatoes the same way with some instant garlic mashed mix and the corn flakes crumbs, and they really were busting! Great flavor! And that's what it's all about.... the flavor!

@@yunengdahl3675 worked out great! This seems to be a proven flavor profile! I coated the chicken parts in the butter mixture, layer them on top of some lemon slices, added some wine and boom.

Made this for dinner and it was a hit! Truly the most delicious and juicy chicken I’ve ever made. This will be a staple for our family for sure! Also, I didn’t have the soy paste this time but I improvised and used soy sauce (eye balled it) and it was fine! Still getting the soy paste for next time though!! 😎

Just a tip on spatchcocking that chicken, after removing the backbone turn it breast side down and use your knife to split the breast bone, much easier and quicker than that "compression" technique.

Parmesan cheese in those potato cubes. Cook potato's in that chicken pan then make mashed then the cubes. Garlic and onion powder in those mashed too.

I made it the Last night. De-forking-licious. The 5 pound roaster barely fit in the pan. Didn't find soy paste accepted that mixing challenge. And that pan juice brought much needed love to the brown rice I'd cooked with it. I'm really looking forward to my lunches this week.

I made this, got the butter underneath the skin, used a thickened teriyaki sauce instead of soy sauce, used a rosemary garlic and sea salt seasoning cause i didnt have rosemary. It came out as the most crisp chicken ive ever made in the oven not as crispy as pan fried chicken but up there.

I think Ramsey would genuinely enjoy this meal as Sam is not some pretentious, egotistical high end chef (who he usually has problems with), he’s just a guy that cooks food out of his home kitchen and any chef would enjoy a home cooked meal made with care
