Just to say, I'm knocking on 40 years old and like to think my being raised in a rural lifestyle has made me pretty well aware of where my food comes from but I never understood what "rolled" oats were or how they were different until now. Would love if you had an opportunity to elaborate a little more on different whole oats, grains, etc and discussed how you prepare (roll or grind) and use them in different ways for flour meal or as is.

@@tmd7859 all grains need to soaked, for health benefits (w/an acid-buttermilk will work, yogurt, kefir, lemon water, vinegar water, whey) If u don’t flake or grind them, u need them to cook😅 them (I disagree with Carolyn here). And they often need a long cooking. I would say, 30 min for steel cut oats. For 2 hearty, high protein svgs steelcut oats, soak 2/3 cup oats + 1T barley or buckwheat grits (“cracked” is another term) in 2 cup water w/1T whey/lemon juice/vinegar or yogurt/kefir/buttermilk. The barley is needed with oats as oats don’t have enough phytase to inactivate the phytates you’re trying to clear. Then soak covered (add nothing else to your bowl or pan) for 24 hrs. When you finish with breakfast in the morning then you start your breakfast for the next day. Add 1/2-1 tsp salt and 2 tbsp butter plus any sweetener. Simmer on low, covered, for about 7min. Stir in 4 eggs and cover again. Stir often, once simmering cook about 3-5min till eggs have fluffed out the oats. U can leave the eggs out and just cook the oats a little more than 7min till done to ur liking. This will work for grits too. Same measurements. Can multiply for more svgs. I often make 6 or 8 svgs.

The only meal we use in the US is cornmeal, it’s just a coarser grind than a flour. But any grain could be ground this way. U can buy almost all grains rolled or “flaked” too. Just have to search them out. I use rolled barley in my rolled oats to soak them that way both grains cook at same rate.

This is a great recipe. I do the overnight oats, where you mix oats and plain yogurt about 1:1 plus some chia seeds and let it sit in fridge overnight to start slightly fermenting and for the chia seeds to absorb the liquid. In morning I add maybe more yogurt or milk if it's too thick and some honey if needed. desired dried or fresh fruit and nuts and spices and then you have a good, healthy breakfast. I have made a batch that was in the fridge for 3 days and tasted better every day. YOu can also add some good cacao with raisins, even chock chips. Very versatile
@YeshuaKingMessiah
Жыл бұрын
It’s not rly fermenting in fridge. Needs to stay room temp to activate. Don’t worry, it won’t “spoil”! If ur rly worried, just add 1 tbsp yogurt/kefir for each cup of grain to enough water to soak. Then add some yogurt into it at svg. This is actually the better way to do it because once you cook yogurt/kefir you destroy all of the good stuff in it which is why most ppl eat it. If u freeze yogurt/kefir it’s the same (so frozen yogurt/kefir is no healthier than milk but it IS yummy!) Oats only need to soak for 24 hours though. So once you have done that if you don’t want to eat the remaining then do put that in the fridge. That will stop the fermenting.

All this to say that grains really do need to be cooked before you eat them. Even if you soak them first. I know it’s a trendy thing to not cook your grains but just soak them, especially oats. However for best health it’s not a good idea.

Just add some to your regular bread recipe, like 1/2-1 cup, so good! Good way to use it up, if you have some sitting around. 😊 Personally, to that mix, I’d add some salt, and milk, and a pat of butter when serving (I like it savory too), or for sweeter version also a small amount of brown sugar. And I love it topped with bananas (and a small spoonful of Nutella for a perfect sweet combo)!😋

Hi there. My wife and I are really loving your channel. We've just today, picked up our first batch of raw milk from a local farmer, and are excited about trying some of the things you've showed us, with that milk. There is one question I can't quite get my head around...and that is the difference between Greek yogurt and yogurt cheese. We've watched you and others talk about making a yogurt cheese, but it sounds like the same process as making Greek yogurt...which we do by making plain yogurt for 10 hours in the instant pot, and then putting in a yogurt strainer for 24 hours - 3 days. Would you mind sharing a brief overview of the differences between Greek yogurt and yogurt cheese? With gratitude, Thane and Rosie.

Caroline, I've been wondering about using fresh grown oats (such as grown for feed, small scale agriculture) for my family but I've heard that they have a husk and it's very hard to remove. Rolling doesn't remove the husk, is that right? How would one process fresh oats into hulled oat groats? I can't find any information online about this. Thank you!
@YeshuaKingMessiah
Жыл бұрын
Rolling/flaking does not remove the husk. I suppose one would have to winnow the oats to get the husk off just like you have to for wheat to get off the chaff. How to do this on a small scale I’m not sure except for the aforementioned winnowing which is where you use a giant fork and toss it in the air when there’s a nice breeze I’m not sure though that it would work for other grains. You’d really have to look it up. Seems to me other grains might have the husks more tightly bound, but I’m not sure. I’ve always just assumed I would be buying my grain 50 or 100 pound sacks. And I only would buy what they call hulled or husked. BUT if we’re going to be forced to grow our own food crops, we will have to know how to hull it!

@jeas4980

It's funny how different cultures see things. I lived in Turkey for several years where they do meal prep on the floor. Our friend, Arife, would roll out a large section of linoleum, and clean it, then proceeded to prep all her meals sitting on the floor. When I had a small apartment kitchen (so small.. literally 1' of counterspace between the fridge and stove and a free standing sink) I made a 4'x8' coffee table out of 4 cinderblocks and a sheet of plywood covered with linoleum stick on tiles. And my "pantry" was very cheap wooden garage shelving from Ikea with beautifully patterned shower curtain panels from the dollar store velcro'd in place to cover the food. That set along the long wall of my living room space... about 14' long and 6' high. A jar only needs about 6" of shelf space to sit on.... when lined up they're quite decorative... so we (much larger space now) have lined the back of our island, where most people have stools tucked under, with shelves lined with canning jars, we have had shelves as wainscotting in our dining room, We also use shoe hangers on the backs of closet doors to hold spices and cleaning supplies. We have a couch against the wall and store cases of extra toilet paper behind it. One of the most creative things I've seen... is my daughter broke (by accident) her hollow core door to her bathroom and removed the interior panel off the door... painted the inside and put in multiple thin little shelves and hooks on the inside of the door... then each shelf got an elastic ribbon above it. She turned it into a medicine cabinet/jewelry box that's still functional as a bathroom door. Hope this helps!
