You can hide the images that you paste into Obsidian by creating a new folder and then going to "Settings > Files & Links > Default location for new attachments (set to "In the folder specified below") > Attachment folder path" and then selecting that folder you just created to be the default location for all new images. Now, any time you paste an image into Obsidian it just goes straight into that folder rather than cluttering up your sidebar.

I came to type exactly this, dumping them in a specific folder is absolutely the way to go. I usually have sub folders for specific things I'm working on inside that "screen shots" folder, then take 30 seconds at the end to do a clean up and dump all of the newly pasted images into their own folder so its not a massive cluster.

Obsidian has a game-changing feature that most other tools do not: Canvas. You can link notes and other elements in mind maps, greatly simplifying organization and logical flows. Is extremely useful, for example, for mapping active directories or logical sections of a program (while doing code review or reversing). The whole thing is integrated as well. You absolutely must give it a shot!

Will probably change or add to the last 2 as I learn more about Notion, Joplin, Obsidian, GoodNotes, Noteshelf, AmpleNote, NotesNook and Notability. I personally like to use obsidian myself, as for the "issue" with images, I like to structure my folders in a way that there is a "00_Assets" folder that contains any images, I seldomly willput PDF related docs within this folder as well on different projects, or allow them to be streamlined within my md files. Each project has its own root folder, then subfolders for the "00_Assets", "01_Category/Phase1", "02_Category/Phase2", etc., with each markdown file created or PDF inserted being named in the same manner "01_...", "02_...", etc. Seems to work well for me. Obsidian can be accessed from multiple devices if you set up sharing of file storage, and, permissions can be setup within vaults amongst folders and files individually between multiple people if you wanted to share /collaborate. However, collaboration editing of the same file by more than one person at the same time doesn't seem to do well.

Obsidian is an absolute beast for just building up an entire wiki of your knowledge. Having user defined links between files lets you build your own structure entirely. A totally flat repository of timestamped notes with a few ad-hoc index pages linking together key pieces of info? No problem. How about a zettlekasten style second brain where the entire vault is composed of linked atomic notes? Sure. A completely traditional hierarchical file system with folders only? Yep. It can do practically any setup you want. A genuine disadvantage is it can be quite difficult and take a long time to figure out the best way to structure your notes because it is so radically open. That and sometimes I like a snappy app which opens instantly. Overall I'd put it as the heavyweight champ in the category.

Joplin and Joplin Cloud: Joplin is end-to-end encrypted and the cloud does not have access to your key. I don't have the link but the tech surrounding how this is implemented is documented somewhere. Plus, it's open source, to include the software that runs Joplin Cloud.

I use keepnote. Tried cherrytree and it's super weird. It has like 15 thousand files within a package even though it weighs 300mb but it took forever to both unpack and delete. Also for some reason black background white text is a default and changing theme changes the window and the working space theme separately and now you're stuck for 15-20 minutes trying to arrange some sort of a color pallet that is workable because the author was lazy to just make two decent default themes. It's just as bad as trying to apply a theme in gnome, with separate selection of icons and colors for different parts of UI. Does it provide a lot of customization? Yes. Is it user friendly? No. I have work to do I'm not spending half an hour to setup an app before it can even be used. The author is a total linux-head, even windows version has linux folder hierarchy, I already mentioned ptsd-inducing theme customization and also apparently "everything is a file" in this editor. Meaning there's no folders, everything is a text file and the files that you'd want to put in one folder will be just "sub-files" (?) of another file. It's giga strange and unintuitive because even working in linux you still think of a folder as a folder in your mind, not a file you put other files into. I get it Linus Torvalds is god but it's not always a good idea to take concepts from linux and apply them to totally unrelated things like a program to categorize text files. 0/10
