Okay so the addition of starch is 100% the move. How I went two decades trying to perfect my hot chocolate and never thought to add starch I'll never know, but I saw it on this tiny channel where an Italian gentleman makes food and drink with simple home-cooking ingredients. As soon as I saw him do it, it made perfect sense. Everyone else says, "for better texture, add more chocolate!" But that affects FLAVOR, and my hot chocolate is already perfectly balanced, thanks.

I use raw egg to thicken my milk drinks. Adds protein and nutrition as a bonus, but warmed just right it is a silky smooth custard like texture. My favorite is fresh whole goat milk, eggs, honey and vanilla, warmed just enough to thicken slightly. Eggs & honey are also home raised.

I always smile when I hear the word “Bailey’s”. As a nurse I worked with a ward secretary who had the worst hangover imaginable: she was nauseated with a head-exploding headache. She said that she drunk a large whole bottle of Bailey’s Irish Cream the night before. I think that I’d be sick too after doing that! Your hot chocolate sounds delicious!

Texture is everything. YES!!! Thank you!! My husband thinks I'm crazy when I won't eat something because the texture is off. He thinks that because the flavor is good, the food is good. No. I can eat something that maybe doesn't taste the best (not bad, but, say, bland) if the texture is good, but I absolutely cannot eat the most delicious food if the texture is off. I love how crab tastes and I can eat dishes with crab in it, but I won't touch crab legs or the meat in larger pieces, like just pulled out of the shell. It tastes stringy and I literally gag. But I can choke down his mother's dry,, flavorless pork roast 🤷♀️ Texture is everything!

Congrats on hitting 1 million subscribers Chef JP. Wow! I still remember like it was yesterday the first upload that you made after your long hiatus on KZitem. It was the stuffed Portobello mushroom that was uploaded back in July 2020. Your return on KZitem made an otherwise challenging year bearable for me. Out of all the negatives that happened back in those pandemic years, your return to KZitem was one of the very few but uplifting positives. Made this with pure Oat Milk (just oats and filtered water), and a Heavy Coconut Cream. It worked very well! For those plant based folks out there. I do plant based every once in a while to reduce damp conditions in the body.

You just used everything I happen to have in my cabinet so you know what I did? That. It is amazing. I didn't get to enjoy the dinner. Instead I spent a good ten hours resting from three days no sleep, busted knee and sinus troubles only to hear later that it was a big hit, brisket so tender even the toothless one could chew it, smoked corn on the cob which is surprisingly a favorite here, prime rib and Au Jus so good nothing was wasted (I'm told my brother drank the Jus), I can't help but be a bit envious and sorry I missed it. Still, everything turned out fine and this was just icing on the cake.

Chef J-P takes his creations as seriously as any other culinary professional anywhere. BUT he doesn’t take himself seriously (seemingly) seriously at all. His technique is alarmingly simple, so much so, he convinces us what he’s demonstrating is simple and easy. This makes him a real life Pied Piper. “Measure carefully!”. You don’t think he isn’t? Oh he IS with over 50 years of experience. He makes learning how to cook fun. And it is and so is he! No swearing, yelling or pomposity. A positive joy to watch. Of course he makes it look easy ….it is for him. We love him. Why? Because we measure carefully and love doing it with Chef Jean-Pierre!

What makes me happy is that such a renowned chef makes hot chocolate nearly identical to mine. Only difference is I use brown sugar, use Chocovine chocolate wine, aerate mine a bit with a handheld milk frother to give it a lighter, airier texture, and instead of cocoa powder on top of the whip cream, I use cinnamon and a little bit of nutmeg. Regardless of cocoa or cinnamon on top, I highly, highly recommend that little sprinkle of ground nutmeg on top. It's honestly my favorite part! Love your videos!
