Thanks for the recipe. If you layer the beets in between the eggs you can get 10 eggs in your jar with the same effect. Using the regular mouth jar itself prevents the eggs from floating up if you pack them properly plus the more eggs the less sour they are as they age. Hope that helps.

My Mama picked her FAMOUS eggs ALWAYS at Easter after her grandchildren finished eating their eggs they hunted which not many was eaten lol but her Yellow was Pink also. She has passed and I have tried and tried to get the yellow pink but it is a fail each time. Does anyone know how to get the yellow pink also? Thank you for this recipe!! They look delicious.

My mom's (RIH) recipe is similar to this. My mom would layer the eggs and beets in a Deli Jar while the eggs were still warm, then poured the liquid mixture over the eggs while it's still warm. Placed lid on the jar loosely until liquid cooled, then tighten the lid completely and let them pickle for 2-3 days on the counter(the eggs won't spoil because of the vinegar)before eating. The yellow will be pink with this process and they'll be delicious!! Enjoy!! 😋

the longer they soak the more color they get. My aunt would make them a month ahead and they were the best! The yolk was always pink.

Yes you can replace sugar with Splenda blend this is the granulated splenda the package has a cookie on it. I do this for my husband all the time and we did it with the pickled Amish mustard eggs which are delicious, as well.

Do NOT use Splenda. It disrupts the gut microbiome and has been shown to lead to weigh gain. You can use stevia safely and of course the beets are naturally sweet so why not try some without sugar?

No spices? Use FRESH beets and cook them until they are still slightly firm, not mushy like canned beets. Use the water from the boiled beets. And absolutely use some interesting spices and about 90% LESS sugar than in the video. Sugar in all recipes should be a mere flavor enhancer, not a main ingredient. 😂😂😂😂😂 In nearly every recipe I see on line from baked to pickled foods that call for sugar, way, way too much sugar is used. It’s a flavor enhancer at the most not a main ingredient!

On a scale of 0 to 14, a pH level of 7 is neutral, a pH level lower than 7 means a solution is acidic, and a pH level greater than 7 means a solution is alkaline. Additionally, sugar tends not to release H or OH ions when it dissolves in water, so it does not alter the acidic or alkaline properties of the solution. But some people still say sugar has a net acidifying effect on the body, when consumed - the same way they say too much meat consumption causes an increase in one's body acidity levels. What we need to shoot for is eating more alkaline foods, such as high mineral content foods., eg., plants, etc. Sugar is empty calories and is also very inflammatory, as well, and I suspect contributes to heart disease and diabetes and cancer, as well. it's just not worth eating the stuff, health wise speaking, is what I was trying to convey.
