Hey Dylan! I'm starting out small in a small town, focusing on retail through farmers markets. Right now that's easy due to cottage industry laws but I want to break into wholesale...with which I'll need a commercial kitchen, but I'm not sure what the best way is to set that up. I don't suppose you could do a video on your kitchen and lessons learned along the way?

What about best of both worlds. Start out in an urban setting while developing wholesale accounts. Then move to more rural area when wholesale is primary business structure.

Great point. This can be a fantastic approach to scaling. It's actually something that we are working on doing with Manoa Chocolate (a similar approach to Zotter in Austria). Our eventual plan is to build a factory on the same site as our cacao farm (located in rural a country zone of O'ahu). But it will require a tremendous amount of capitol. Recommend checking out episode 35 where we talk about the Napa Valley Concept.

Hey Dylan! Thanks for these vids. Started making my own bars and have just sold my hundredth bar. Fun times and your content has been so extremely crucial. Question for you: when I'm making batches with 500-700 grams of nibs to test in one of my small premiere wonder grinders they taste better than large batches. I just ran a couple experiments with some great Madagascar and Ecuadorian beans, doing the exact same roast and process, and every time, the small batch comes out better than if I do a batch with 1500-2000 grams of nibs. It's driving me nuts. The small batch will somehow retain more flavor complexity. I don't know why or how to get the bigger batches to taste as good, short of reducing roast times, adding sugar earlier, and reducing total grind time. Any advice would be so massively appreciated.
