Belgian Protein Waffles!
One of my new staples for breakfast around here, they freeze great, are super tasty and jam packed with protein! With just under 60 grams of protein for 6 waffles, these are great sneaky way to get in some protein in the morning!
Here’s what you’ll need:
A kitchen scale
Large mixing bowl
Medium mixing bowl
Small mixing bowl
Stand mixer or beaters
Whisk or fork
Waffle maker of sorts
Ingredients:
290 grams of flour
1tbls of baking powder
93 grams of sugar
1/2 tsp salt
1 tsp cinnamon
2 scoops of your favourite protein powder - I am using the chocolate flavour of the brand lean for - organic plant based protein (each scoop has 21 grams of protein)
2 eggs separated
136 grams of butter - melted
533 grams of whole milk (non dairy milks will work as well)
1-2 tsp of vanilla
Process:
Start by separating your eggs, leaving the egg whites in your stand mixer bowl or a medium bowl. Beat on medium to high speed for about 3-5 minutes or until you have some stiff peaks. Set aside for now.
In your large mixing bowl, combine flour, baking powder, sugar, cinnamon, salt and protein powder, whisk that together and set aside.
In your small mixing bowl, combine the egg yolks, milk and vanilla. Then begin to slowly pour your melted butter in as you whisk. I like to do this in increments, pour a splash of butter in and make sure it’s not curdling and keep going slowly until you are out of butter.
Now grab your large mixing bowl of dry ingredients and pour in the egg and milk mixture. Whisk until fully combined and there are no more dry pockets.
Next grab your egg whites you beat earlier and fold those in with a spatula.
Once your batter is fully combined, start heating up your waffle maker. I cook mine at temperature 3 for about 4 minutes each waffle. This will depend on your waffle maker :)
Keep making waffles until you are totally out of batter, I can get 6 large waffles from this. The recipe can easily be doubled as well and they freeze incredibly! I like to keep a batch in the freezer and then to reheat them, I’ll place them on a baking sheet in the oven for about 10 to 15 minutes at 300 degrees f. :)
