I made this because my husband requested that he really like the puff cream I made!
To be honest, this cream is the perfect ratio and the taste is guaranteed, so please try making it!!
If you look at the puff pastry recipe, there are mainly water dough and milk dough, the difference between the two is
Dough with only water - a little more crispy
Water and milk dough - a little more savory
However, if you put cream and keep it in the refrigerator anyway, it will become soggy. So I prefer the dough with a little milk. I love it so much that it's not crispy!
Also, be sure to add "a pinch of salt" when making custard cream.
Much more flavorful.

Ingredients (15-16 size)
➡Diplomate Cream
54 g yolks
55g caster sugar
pinch of salt
240 g milk
Half a vanilla bean (or a teaspoon of vanilla bean extract or paste)
20g cornstarch
15g unsalted butter
150g heavy cream
15g sugar
➡Puffs(choux) dough
60 g of water
50 g milk
50 g butter
2 g salt
70g Cake flour or All-purposed flour
105g-110g (room temperature) eggs
Bake at 320℉ for 15 minutes and bake at 302℉ for another 10 minutes (convection oven)
Bake at 356℉ for 15 minutes and bake at 338℉ for another 10 minutes (deck oven)
***Bake time varies depending on shoe size. If you make it bigger than me, you need to increase the time***
