Ingredients
• 2 pounds (1 kilo of raw or frozen shrimp, already peeled and deveined
• 2 red onions cut into super thin half slices
• 6 medium ripe tomatoes ( peeled, and blended/grated) or you can use canned tomato sauce (optional)
• 1 green or red bell pepper - diced optional
• 6 green lemons (juice)
• 1 orange (juice)
• 1 bunch of finely chopped culantro or coriander
• Salt, pepper, hot sauce, and oil to taste
Preparation
1. Immerse the onion slices in water with two tablespoons of salt, leave for a few minutes, then rinse them well with cold water.
2. Cut and squeeze the juice from limes and orange.
3. Finely cut the bunch of culantro or coriander.
4. Put the tomatoes in hot water (1 or 2 minutes). Remove the skin. Grate and remove the seeds.
5. In a saucepan, boil water with salt. When it is boiling, add the shrimp, cover the pan and remove from the heat. Let the shrimp soak for 2 to 5 minutes or until they turn pink.
6. RESERVE 1 CUP OF THE BROTH WHERE THE SHRIMPS WERE COOKED before straining them. Strain the shrimp and rinse with cold water.
7. Mix all the ingredients in a good-sized bowl and let it rest in the refrigerator for at least one to two hours. Taste and adjust salt if necessary.
8. Tostones, rice, canguil (popcorn), and soda crackers can be served as accompaniments. Enjoy this delicious dish!
