Followed the steak recipe, but nixed all the healthy greens. First time ever cooking a tri-tip and didn't feel like jacking with my Weber kettle, so did the oven and then seared it on my gas grill. Came out perfect. Kinda had the flavor and texture of a giant flat-iron steak. Threw the meat in green hatch chili tortillas with guac and pico and then went to town. Well done Sam!

I made this today, sans the garlic bread. I reverse seared a sirloin steak on a Weber grill, I make the chimichurri sauce and ranch dressing, and grilled the tomatoes. My wife laid out the salad greens, cut the avocado and the cucumber. This salad was a huge hit, thank you Sam!

Hats off to Nature (for making those awesome tomatoes), Sam (for buying them) and especially MAX, for his amazing camera work and lighting - those things were popping out of my TV! Also, I'm sure I speak for many when I say I'm always glad when you incorporate veggies into your dishes because I'm almost 40 and it's a struggle to keep the lard off my belly. So thanks for that!

The best part of Sam's videos that makes me want to "make America cook again" is when he's done and takes a bite and his mouth is full, and he has that "deflation" motion that you can just tell that it's absolutely one of the best tasting things he's made, My jaw just tightens every time making me almost start to drool vicariously at the though of making and eating one of these things. DEFINITELY going to hit up Graze and Not Not Tacos next time I'm down in SD

Now that is how to cut a tri-tip. If you own a round weber, just pile the brickets on one side. Put that tritip on the heat side and let it rip about 2-3 minutes a side. It may flair. That's ok. Then put it to the side that doesn't have brickets (indirect heat). Close top and bottom vents to half way and put lid on. Depending on the size, your tritip will be done in 30-35 minutes.

Spot on with the thermometer advice for meats. When I put my primal caveman ego aside and picked up a thermometer, my cooking game got an instant, huge bump. Like... C+ cooking straight to an A-. Hey Sam. Great video as always. I was looking over some of your older videos. When it comes to using a drill to core a pineapple, how about cutting off the ends and leaving the outside until after you've cored it? Easier to hold and maybe a pilot hole. You could also wrap the unpeeled pineapple in a towel and drill it on its side. Keep doing what you do:)
