Citric acid as an acidity regulator is really there to ensure consistency across batches of tomatoes. It really just means that their supply may be a little inconsistent in the amount of natural sugars, and to not have people complaining they use it to balance acid/sweet. It is in no way harmful (and it's not really a preservative), it just indicates that they may sometimes have issues with their supply chain throughout the year. You can look at it like a single malt whisky producer having to blend several years product together to get their signature flavour.

I only use Mutti, it's the freshest and most tomato tasting brand that I can get around these parts (Denmark). All the other cheap brands have citric acid and all kinds of junk in them. Mutti does not. It's just tomato and salt. Good stuff :) I'm especially impressed by their ready to use pizza sauce. It's absolutely delicious.

My store carries two brands: Cento and Mutti. I was trying the Cento brand for the longest time and then I gave Mutti a try and liked it a lot better.

Thank you for your educational video. I thought whatever comes from Italy is good. Luckily enough, I had Mutti in handy. I will try finding Muraca in my neighborhood. I really appreciate your strong passion and will to spread Italian ingredients with quality. Because I would be criticized and be blamed for spreading bad reputations for the big brands we, Japanese are allowed to make transactions with if I said something negative about the products of big brands. Thank you so much for your generous help.

The basil Barilla tomato sauce should’ve been included since it’s a brand made in Italy, right? Anyways great great video. It is very insightful and just a blast to watch. I swear you made learning about Italian food so gripping and inthralling. Where I live I can’t pick Muraca off the shelves of my local grocery stores but I could buy it online.

None of these are available in my area. Tomato sauce in the US is canned. I usually can my own tomato sauce as I prefer a thicker sauce. My sauces are the base soups, spaghetti, lentil casserole, or wherever I need tomato sauce. If I run out of my home canned, I buy plum tomatoes and drain the water from the can and then put them in a food mill to remove the seeds and skins. I buy the best that I can afford but usually work on making the cheapest ones better to eat. Once in a while the better brands are on a very good sale and I can afford it.

Mutti is my favourite even though I much prefer their smashed tomatoes over their passata. Never found the other top brands here in Switzerland (I only found pomì maybe once and of course CIrio). Mutti is the most expensive brand here where I live, but it tastes very genuine and not very far from (the still unbeaten) my grand parents "pummarole" (probably the same that your nonna did, given that my grand parents lived actually next to yours in Villa Raspa). Great video my friend! Hope to see you again in person sooner or later!

Thanks for this Vincenzo. Can't find commercial pasada in these parts. So I've been bottling my own using your Nonna's recipe, Roma tomatoes from my garden, and big cans of San Marzano I order by the case from Italy. I'll order a few bottles of your top picks to compare with my homemade. Ciao.

The best passata is nonna's homemade with a green pepper ( capsicum). Does this sound familiar, Vincenzo? The only thing I did differently is that I flame roasted the capsicum first. It adds such a fantastic flavor to the sauce. Ciao da New York.

Great video, Vincenzo, was using Cirio just yesterday for ragu bolognese haha. I think it’s great for all kinds of meet+tomato souses. Pomi is my fav, but lately I tend to use it more for souces to serve it with steak. May be will try it next time in bolognese again. Muraca is hard to find here, but will keep an eye on it, and will try Mutti. Thanks!
