CRISPY TOFU:
-200g tofu
-1 TBSP corn starch
-1 TSP each salt, garlic, paprika, cumin and pepper
-oil for frying
DUST with starch and spices/FRY until golden brown
PEANUT NOODLE SALAD:
-1 TBSP peanut butter
-1 TBSP vinegar or lime juice
-1 TBSP sweetener of your choice
-1 TBSP soy sauce
-1/2 TSP each ginger powder, garlic powder and chili flakes
-1/2 bell pepper
-75g (raw weight) pasta
COOK the pasta/MIX the dressing/COMBINE chopped bell pepper, pasta, half of the crispy tofu and the dressing
TAHINI LEMON PASTA:
-1 TBSP tahini
-3 TBSP plant milk
-juice and zest of 1/2 lemon
-1 TBSP sweetener of your choice
-salt and pepper to taste
-1 TSP each garlic powder and dried herbs
-1/2 medium zucchini, chopped
-75g (raw weight) pasta)
COOK the pasta/MIX the dressing/COMBINE pasta, the other half of the crispy tofu, zucchini and the dressing
SPEEDY LENTIL CURRY:
-1 onion
-1 carrot
-2 cloves garlic
-2 TSP garam masala
-1 TSP each ground cumin and ground coriander
-1/2 TSP cinnamon
-salt and pepper to taste
-300g chopped tomatoes
-1 can (215g) lentils or chickpeas
-1/3 cup (80ml) coconut milk
-1 TBSP lemon juice
FRY onion, garlic and carrot with the spices/ADD remaining ingredients/SIMMER 10mins/SERVE with cooked rice
FAKE RISOTTO
-220g cooked rice
-1 onion
-2 cloves garlic
-1 bell pepper
-1/2 zucchini
-150g smoked tofu
-1/2 cup (125ml) unsweetened plant milk
-salt and pepper to taste
-3 TBSp nutritional yeast
-2 TSP dried herbs
FRY the veggies for a few minutes/ADD the remaining ingredients/COOK 2-3mins until creamy
