Beetroot pancakes with salad and cottage cheese
Ingredients:
120g (1 cup) flour.
65g (1/2 cup) whole wheat flour.
1 tbsp baking powder.
1 tbsp brown sugar.
Pinch of salt.
2 beetroots (160g/5,6 ounces).
120ml (1/2 cup) milk.
- puree beetroot and milk.
1 egg.
125g (1/2 cup) yogurt.
3 tbsp butter, melted.
120ml (1/2 cup) milk.
- grease oil in a pan
- add beetroot batter
- cook both sides
cottage cheese.
herb salt.
Romaine lettuce.
- serve with cottage cheese, herb salt and Romaine lettuce
