Freshly laid eggs are good on the counter for about 2 weeks. I’ve eaten refrigerated eggs that were 9 months old with no Ill effects.

I'm sure (knowing me) this story won't surprise you much. One of our hens has been fleeing the run to lay eggs in a secret nest. We finally found the nest and there were SIXTEEN eggs in it. You know me and tossing things out. I washed all the eggs right away, popped them in the fridge, and over the next week carefully cracked, checked, and smelled each one before use. None of them smelled in the least. Due to freezing (I presume) some were a bit runny inside. But none smelled and we ate them all. I DEFINITELY very thoroughly cooked all of them to a degree of care beyond what I usually engage in. But as far as our experience went, we were all (thankfully) fine and we had 16 extra eggs than we otherwise would have. I don't know if this approach would be penalty free 100% of the time. But our experience was fine with it.

I cannot answer that question. If the water is still cold it may be fine. My best advice is when in doubt, discard to be safe.

As an old farm girl who run roosters with my hens, if I find a nest of eggs I will leave it since I don't know if the hen has been sitting on the nest, I would rather lose a few eggs than crack open a baby chick.

Coat your eggs with food grade mineral spirits then layer them in a 5 gallon bucket with sand and they will last at least 6 months in a cool dry place like your basement

My grand ma always told me that the best to keep eggs for a long time was to keep them out of light. No need to set them in a fridge (our eggs are not washed).

Fantastic info! SIL started raising chickens this year and gives us a couple dozen eggs a month. We freeze food scraps for her chickens so it works out. I don't wash them until just before using. Hopefully, my double decker egg trays aren't bad: eggs lay on their sides and roll forward as used. We go through them pretty quickly. The dog helps: if we cook eggs she gets one. She's not spoiled or anything! Thank you again. Merry Christmas!

Merry Christmas friend. I found my shelf stable pantry collaboration notebook and because I have been getting more freeze dried foods, I added a tab and started adding recipes of shelf stable freeze dried meals in a jar.

I'll be lucky if you see this, but I heard about a method of coating the eggs with mineral oil to "reseal" them so they'll last longer. Any input on that?

I take it you are talking about store bought eggs. I'm not really sure about the effectiveness of this method since the eggs were mot covered with mineral oil for the 1-2 months in transit before you purchased them.

Why throw out the cracked egg? Scramble it (no salt) & feed it back to the chickens.

UK here... We have best before dates. I sometimes pick up cartons of eggs that have been reduced in price as they've reached their best before date & have had them in the fridge for a few months sometimes & rarely if ever get a bad one. I keep all my eggs in the fridge. Honestly... Only ever really had occasional bad eggs when I've had a batch of my Brothers home laid ones. But he could be giving me old eggs after he's topped his up and he leaves them out on the counter often but doesn't wash them. I know this because sometimes they're covered in quite a bit of crap. lol Thanks for the tips, I store mine pointy end up so will start storing them pointy end down. Of note it is illegal to sell unwashed eggs in Ontario Canada. We have a local supplier and Wolfie dig seems to enjoy them better than washed ones. We wash just before use. We don’t eat eggs and the supplier has them very naturally. They haven’t slaughter the males yet but that is common hence we don’t eat eggs. The heart disease from eating egg yolks kills way more people a year than salmonella but normally bias means no one sees that 😢

Technically they are like your mayonnaise and should only be kept at room temp for 2 hours. If you have a cooler they will last much longer.

I do not feel comfortable doing this. Lime is a skin irritant and the FDA does not recommend water glassing as a safe method for storing eggs. Calcium Hydroxide (slacked lime) is known to contain botulism in the powdered lime itself. Hydrated lime does not protect against botulism in long-term storage without acid and heat to kill it.
