Growing up in Asia, I never care if the meat is medium, well done. All I care is it cook and I can eat it, as long it fill my stomach than it good enough.

If a cut of meat has intramuscular fat, it's indeed fine to cook it more, like chicken thighs, pork shoulder, beef shortribs, pork neck, lamb shoulder. Indeed these cuts sometimes taste better if cooked to a higher temperature point. That is because the fat melts and keeps the meat juicy and succulent from within. Some cuts however have little to no intramuscular fat. If you cook those to above medium you're literally burning money; the meat juices will evaporate and the meat will dry out, leaving it with a texture of literally shoe leather.

I don't know where you are from. Asia is a Hella big place. But even the crickets in Vietnam had to be cooked in a precise way. In China the chesuan pork had to be cooked for a whole day so the spices could penetrate better... So my experience with a couple countries in Asia is that it's a superb food culture. And all the food has to be perfectly done

I think it was B roll shot with the cold brisket (the one she prepped ahead of time and pulled out of the fridge later). I don't think it was actually cooked with plastic film.

It's actually a super common practice in commercial kitchens! The cling wrap works as a sealant to keep moisture in, removed part way through and wrapped with new aluminum - Wham! Perfectly juicy brisket.

I grew up eating this type of brisket…..then I learned about Smoked Brisket. You can’t call the Jewish method brisket. It needs another name. Like dry tough cow meat. Low and slow is 225 for 8+ hours.
