The weather is so hot these days.
I especially crave refreshing desserts in the middle of a hot summer like this.
Today, I'm introducing a really easy but really delicious no-oven dessert.
It's a British dessert called 'Lemon Posset'.
It's a dessert that solidifies cream with lemon juice by using the property of milk protein coagulating when it meets acid.
It's so easy to make, but it's surprising how delicious it is!

▶ Ingredients (6 servings)
260g Heavy cream
70g Granulated sugar
40g Lemon juice
One Lemon zest
1) Mix sugar and lemon zest well
2) Add 1) to heavy cream and boil for 3 minutes while stirring well.
3) Turn off the heat and add lemon juice.
4) Strain 3) and pour into mold and harden in refrigerator for at least 3 hours.
Storage: Can be stored in refrigerator for about 3 days.
