You are going enjoy this recipe! Everyone that has ever eaten this brittle absolutely loves it! The microwave was a game changer many years back when I made the change! No more stirring at the stove! So much easier to make this version! Great addition to your gift giving tins, your co-workers will love you! LOL
If you haven't ever made this, just follow along and you will succeed. Don't have fear, it truly is so simple, no slaving over the stove stirring until your hand falls off. No "water" test. No thermometer to mess with. When I first converted over to the microwave I ruined several batches, but then... SUCCESS! The main thing is thorough preparation. BEFORE you jump into the recipe, have EVERY single ingredient measured out and ready BEFORE you start! Have the oven preheated and the cookie sheet ready to go. This get VERY hot. Molten hot. Use EXTREME caution around little ones.
Please know the correct wattage of your microwave. It makes the difference.
1 cup sugar
1/2 cup light (Karo) corn syrup
1-1 1/4 cup of roasted salted peanuts (if using non salted kind simply add in a pinch of salt)
1 Tablespoon butter plus about 2 pats worth for the cookie sheet
1 teaspoon vanilla extract
2 (yes I said TWO) level teaspoons baking soda
In a microwave safe bowl, mix together the sugar and corn syrup.It will be very thick and hard to stir. Microwave on high for 2 minutes. In the meantime preheat oven to 300 degrees. Place foil on a cookie sheet and place the 2 pats of butter onto the sheet. Place in oven so that the butter can melt. Back to the microwave! Remove mixture and stir thoroughly. Replace and microwave on high for 1 1/2 more minutes. Remove and stir in the peanuts. It will be thick and hard to stir, try to coat the peanuts. Place back in and microwave for 3 minutes. You want it to just start showing a HINT of color. You do NOT want it turning color by over microwaving, as the mixture will continue to cook even after it is removed.You don't want HARD brittle with burnt peanuts.
NOTE* If your microwave is 1000 watts or higher, on the last minute, you will need to back your power down to 60-70%!!!
The cookie sheet should be getting nice and toasty, the butter should be melted. While the peanut mixture is on the 3 minute cycle, take a pastry brush and simply coat the foil with the melted butter and replace into oven to keep it hot.
Back to the microwave!
Remove and stir the peanut mixture well. Add in the butter and vanilla extract. Stir thoroughly and place into microwave for 1 minute. Remove after one minute. It will very VERY HOT!! It will be bubbling. Stir and IMMEDIATELY add in the baking soda. Stir well! Have the cookie sheet right there READY TO POUR the brittle onto the sheet. Brittle sets fast, very important to have everything at the ready. Let the brittle flow naturally. The hot sheet helps. Place on an out of the way cabinet to set. It usually takes around 25-30 mins. When set simply break apart and store in an air tight container. ENJOY!
