Canning pumpkin is a great way to get your family eating more pumpkins. It's easy and delicious! This video will show you how we preserve them so they're available all year long, even after the harvest season has passed. I have also included one of our favorite recipes for French toast just in case there was any left sitting around that needed using up before fall comes around again next year.

French Toast Recipe
Prep: 3 minutes Total Time: 10 minutes Serves: 4
4 Fresh Eggs
2 Tbsp Pumpkin Puree
1/4 tsp Cinnamon
4 Slices Whole grain bread
2 tsp Organic Real Butter
Flaxseed meal (optional)
1- In a small bowl, whisk the eggs, pumpkin & cinnamon. Dip the bread slices in the mixture to coat evenly (30 seconds should do)
2- Add the butter to your cast iron skillet. When the butter sizzles and melts add the soaked bread to the pan. Sprinkle with flaxseed meal if desired. Cook until golden brown on the outside about 2-3 minutes. Serve with real organic maple syrup.
