It was flour. Flour is combustible when ground fine and dry. With the wind blowing the flour around in the air it acted like a house fill of gun powder.

It's surprising how many things are explosively combustible when ground fine and dry. Many a sawmill/Woodworking shop has detonated for similar reasons.

34:02 - I agree 100%, it's flour. Some historians theorize it was airborne 'flour powder' igniting in Thomas Farriner's bakery at Pudding Lane, London in 1666 which led to 'The Great Fire'.

Wheat farm in ND... & Wheat dust in the air while filling silos combined with static electricity in the air due to weather is a dangerous & explosive combination. One that every farmer is aware of, today's farms have vacuums on the conveyor belts to keep the dust down. But not in the 60's, we were still learning.

I feel the same way. I also love that they put in these edited reactions many of the dramatic, dialogue scenes, and that they appreciate and pay attention to those scenes, not just the exciting action moments. So many reactors talk too much and too often, to the point they miss many important and awesome details, which annoys me. 😂

You can see an explosion like that with most anything that combines a fine dust with oxygen plus an ignition source. One example is grain elevators/silos you see a lot of in the Midwest US. The grain dust has been known to explode causing massive explosions.

McCall goes into the bread factory, he rips open several sacks of flour, which is highly flammable. So if there are a large number of sparks it will strengthen the spread

That scene with the sugar reminds me of Red Dead Redemption 2 when you're in Guarma. Sugar is combustible and presents an explosion hazard when it is finely divided and dispersed as a dust cloud in air
@GasparGa

I thought it was flour. Technically both sugar and flour can explode but flour is more likely to hang in the air as very fine dust and it would make more sense to have bags of flour in a bakery imo

The main character does not need to change, this is a fallacy caused by the whole Hero's Journey nonsense (nonsense? yeah it is, but that's another story). Anyway Robert doesn't change. He is an absolute constant - Dr Kimble in "The Fugitive" is the same, there's no character arc. People around them change.
