Ingredients:
1 kg of flour
40 grams of fresh yeast
400 ml lukewarm water
3 pc potatoes (rather small)
3 tsp salt
5-8 tbsp flour
1 tsp cumin
Bake for the first 15 minutes at 250°C / 482°F (sets the highest temperature in the oven). Then reduce the temperature to 180 °C / 356 °F and bake for another 55 minutes - keep an eye on it
PREPARATION:
Sift the flour into a bowl, make a well in the middle and add 3 tsp salt.
Dissolve the yeast in a glass with 200 ml of lukewarm water and leave to rise briefly. Then add the briefly risen yeast and the boiled, grated potatoes to the flour. Process into a smooth dough. If the dough is too stiff, just add more water. If the dough is too runny, add flour (it depends on the quality of the flour).
Cover the dough with a tea towel and let it rise in a warm place for about 20 minutes.
After 20 minutes you can add cumin or other seeds. Put the dough in a casserole dish (I lined the bottom with parchment paper) and let it rise briefly. Cut the top with a sharp knife and put the bread in the oven.
