For starting yeast:
80 grams of sourdough bread dough
80 grams of high protein flour
50 grams of water
For the first dough:
400 grams of high protein flour
150 grams of granulated sugar
175 grams of water (warm)
190 grams of starter yeast
200 grams of egg yolk
170 grams of salt-free butter (room temperature, soft)
For the second dough:
100 grams of regular flour
35 grams of granulated sugar
60 grams of egg yolk
60 grams of butter (room temperature, soft)
20 grams of honey
12 grams of salt
1 vanilla pod (seeds)
1 orange's peel
1 lemon's peel
100 grams of orange seeds
100 grams of raisins (Soaked for 5 minutes and drained)
100 grams of hazelnuts
For the topping:
1 egg yolk
2 tablespoons of cream
4 dessert spoons of butter (cold)
