NY Crumb Cake....or in my world...Cobblestone Cake! Enjoy! Get the coffee on!! 😉
NY CRUMB CAKE
CAKE
1 cup all purpose flour
1/2 cup cake flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup buttermilk
1 large egg
2 Tablespoons melted butter, cooled
2 teaspoons vanilla
CRUMB TOPPING
2 1/2 cups all purpose flour
1 cup light brown sugar
1 1/2 teaspoon cinnamon
2 sticks of butter, melted and cooled
Powdered sugar for dusting
Preheat oven to 350. Spray a 8x8 pan with non stick spray. Set aside.
Make the cake: In a bowl, add the flour, cake flour, baking powder and salt. Stir to combine. Make a well in the middle and add the buttermilk, egg, melted butter and vanilla. Combine all till smooth.
Evenly spread into the prepared pan.
Make the crumb topping: In a bowl, combine the flour, brown sugar and cinnamon. Add the butter a little bit at a time, stirring with each addition, combine throughly. With your hands, take a fist full and squeeze it together and then pinch off pieces of and toss it on the cake batter making big cobblestones. Keep making cobblestones and adding it to the cake batter. Bake for 24 minutes.
Remove and let cool. Dust with powder sugar and cut into serving pieces. Enjoy! ( preferably with a cup of joe 👍🏼).
NOTES: if you don’t have cake flour just use all purpose flour! But, it’s really the best texture using both flours!
