Mike when the recipe specifies cocoa butter powder could you buy something like greens organic cocoa butter and grind it to a powder . ? Thank you. These look stunning and delicious btw

Yes Helen, I tried that with some cocoa butter drops and it worked. You might get a very slightly grainier frosting (as the pre-powdered butter is really finely ground) but it'll still taste delicious. The alternative is to replace the cocoa butter with the same weight of coconut flour, as these two ingredients are almost perfectly interchangeble from a functional point of view (ie the frosting will pipe the same and still be room stable and not melt at normal room temperature). This will make your frosting definitely taste of coconut, but I think that would work well with the rest of the cupcake anyway! Hope those tips help - let me know how you get on - it's helpful to other viewers to ask questions like this so thanks for posting! (PS I'm doing another cupcake recipe video this week which will feature coconut as the main flavour, and that frosting does without the cocoa butter, so you'll be able to see how similar they are (in appearance anyway))

These look great! What about if you do not have a fancy mixer? Beating them by hand is ok? Just more time consuming i guess!!?

Cheers Rob - yes you can definitely do it old-school. > Cupcakes Stage 1 - wet mix: you can use a hand whisk to whisk this for 3 minutes by hand, (the times aren't critical - you can't overmix it at stage 1, and undermixing is not a biggie). Stage 2 - adding the dry to the wet - this one is a tiny bit trickier - stir it for 20 secs using a spatula/ wooden spoon, scrape down and stir again 20 secs. You know when to stop mixing when it *starts* to look elastic (check the batter in the video at that stage to know what you're looking for), but no longer. Most people tend to overmix rather than undermix when mixing by hand. If you undermix it'll be a smidge crumbly (and might sink slightly in the oven), if you overmix it'll be a smidge chewy (and domed rather than sunk). It'll still taste delicious either way. . . . > Cream It'll be hard purely by hand - so I'd suggest one of those electric hand mixers (£10 job). Blend until smooth. The main thing that can go wrong at this stage is overblending: the cream will warm up a bit too much, making it too runny when piping. Hard to explain what "too runny" is . . . do a little test piping on something first - if it doesn't keep the shape of the nozzle it's too warm. Whack in the fridge for 15-30 minutes. Test again. But really getting the temperature right is more about how it looks rather than how it tastes. I look forward to your masterpiece on your Insta feed . . .

Hi Mike, these look great. Will definitely give them a try. Any chance you could make Mincemeat tarts? I live in Canada and I can only find jars of mincemeat with animal suet.
