Discover Alsatian cuisine with our guide Chef Georges Grunenwald, a native Alsatian, who is the President of Best of Gastronomie, an international association of Chefs from 135 countries, with more than 100,000 members.
Located in the east of France, on the west bank of the Rhine river, bordering Germany and Switzerland, this region has been going back and forth between French and German States ruling for centuries. So it is no surprise that the influence of German culinary tradition is being felt strongly. Though, the first dish that comes to mind is the famous Choucroute, which is a variety of Sauerkraut, there is actually more to be discovered.
Though French is the official language, the traditional language is Alsatian, a dialect somehow related to Swiss German. A lot of the dishes have kept their German names. Flammekueche, Kugelhupf, Christstollen, Spaetzle, Fleischnaka, just to name a few. Due to the continental climate, you will understand that the cuisine is a hearty one. Pork is the main meat used. Potato is another staple. As for drinks, Alsace produces some of the best Riesling and very high-quality beers.
The episode is in English and French with English Subtitles.
