That burrata hack is a good move!! Sandwich looks great! For dredging something like those filets I would use a casserole dish, nice and big and you can shake it to coat the eggplant thoroughly.

I totally feel this! I went vegan and two weeks later, I got my allergy test results back and found out I had milk and egg allergies. 😂 This was after being vegetarian for a while

If you don't like eggplant, there is a Sicilian street food called panelle. They are thin chickpea flour fritters that can be eaten alone, or in a sandwich.

For seasoned flour, I'd use a mixture of salt, pepper, garlic, onion, paprika, mustard powder, thyme, oregeno, basil, and maybe ginger. And some MSG. Think knock off KFC seasoning. Great on fried veggies! (Broccoli with this seasoning, in corn starch for crispness when frying, with a sweet and spicy Asian flair sauce is delicious. General Tsos without the chicken.

You need to either add some cayenne or use smoked and hot paprika in that mix. It’s got everything else covered but it’s lacking a bit of heat to it. :)

I must say, I love most basic sandwiches - I eat one pretty much everyday ;P But you know what? Having a more elaborate recipe like this one up my sleeve would probably make my sandwich game much more interesting! Plus, I looove eggplants so this one is right up mu alley! does this taste like eggplant, and if so, if there a replacement you'd recommend? I honestly hate the taste and texture of eggplant, I just can't get used to it. any kind of squash-adjacent vegetable is a nope for me. I've found I only ever like zucchini as noodles when they've been cooked enough and drowned in some other flavor lol. maybe I'll just try the sandwich with something else as the "meat" or leave it out entirely. it looks so good!

I have been making something similar for years. Instead of frying the eggplant, I grill it . I also make a vegan garlic bread and I use a sweeter balsamic vinegar. For my cheese, vegan mozzarella or provolone in slices.

That's the only way I ever knew to salt the eggplant! :-) The point of draining the liquid is to get the bitterness out and intensify the flavor. If you're watching salt, you can lightly rinse them, then pat them dry. This is classical method, so you're not taking a risk - though if you're frying you have to be more careful about drying them.

I added liquid smoke to the egg replacement then added dry rub and smoked paprika to the flower then added barbecue sauce pickle and coleslaw to the sandwich and made a pretty darn good barbecue sandwich with the eggplant recipe

All your food looks really good and I’ve tried a handful of the recipes myself now and enjoyed them. But only as occasional treats because all of them tend to do things like use fake meats, cheeses, etc., be heavy on breading and frying, and using lots and lots of oil. I’d love if you would make some more whole food plant based recipes to try as well for those of us who are more health conscious (minimally processed, no or at least low oil).

If you rinse the eggplant, they're less salty, and if you don't dry them, the flour sticks to them well without the fake egg. I don't use panko, just flavored oat flour, for max nutritional value. I usually eat them in rounds (so easy to maneuver), and top them with sautéed zucchini, to lighten up the eggplant. Eggplant-haters love eggplant battered and sautéed!

I just love your channel 🤓 so much! I love this is a Vegan Eggplant Sandwich, not a vegan meat recipe (although I love them & yours in particular). It's just nice to have non-meat food tastes, in sandwiches particularly, that stand on their own. It would be good to do a series that directly explores these delicious And non-meat tasting foods. For example, mushrooms 🍄, of course, being a good start, & what others have tried. I did have another thought. You used Just Egg in the breading. While the cost of Just Egg is going down it is still touch pricey. I was thinking, what if you would take a couple of easy to harder egg replacements recipes from breadings to scrambled eggs, especially using Mung Beans that can be made dried, mixed, & then prepped before use. (Fairly easy to make easy prep, store, inexpensive, more available, & with seasoning can be really egg tasting: all these a win-win. Anyway these are ideas. You have so many lovely recipes of your own & I just want to see more of what you so creatively and great tasting come up with in your recipes. 🤓 Viva lá Sauce Stache!!! 😋💚🍆
