Balklava is a Cretan pastry made more than 3000 years ago. In his writing Δειπνοσοφιστες (ΙΔ,647-648) (DinnerScholars) Athinaios recorded the description of Χρυσίππος Τυανεύς ( Xrysippos the Tyaneys) from Crete for the so called pastry of Γαστρίν (Gastrin) or Κοπτή (Kopti) which translates to the pastry cut in little pieces or Κοπτοπλακούς (Koptoplakous). He says : take fluffy walnuts from Thassos island, hazels from the area of Pontos ( now northern Turkey coastal area in Black Sea) almonds and along with black spores from black poppies bake them carefully not to let them burn rather dry them out. Put them in a pure mortar and crush them completely and add some boiled honey and any pieces of fruits you like (usually grapes or crushed figs). Then add pepper and stir them till they are homogenised. The mixture is black due to the spores of the black poppies. Then apply the mixture on top of many layers of fyllo dough and then add crushed sesame till it makes taxini which you should mix it up with boiled honey until it forms a pulp (taxini nowadays is the key ingredient of Halva not the one with olive oil but the one with lots of sugar and other ingredients like honey or cocoa) . Open up two fyllo dough’s and place it in a symmetrical way in them. So this is the original recipe passed from Crete to Ancient Rome the in the Byzantine years it passed from Rome to Constantinople and after 1453 it was passed to the ottomans. And then again it came to Greece just with a different name like Baklavas !!!!
