YAMASHITA Haruyuki is a Japanese cuisine chef, who develops new versions of Japanese cuisine around the world. He says he sometimes has to create 'Japanese Cuisine' in far away countries or regions where there is no access to Japanese food marerials. What makes cuisine, made from only non-Japanese material, Japanese? He finds Japanese chivalrous spirits, or 'samurai sprits' in the quintessense of Japanese Cuisine.
