🌸 This recipe make only 3 of 5.5 by 3.5 inch brioche breads. You might need to double or triple the recipe.
🌸 For this recipe you will need a stand mixer.
🌸Before you reach out to me saying that the dough is too sticky and you need to add more flour, make sure you kneeded the dough long enough. With time the dough will build strength, become shiny and super stretchy.
🌸 Each rise is about 2-3 hours in between. This will affect the quality and rise on the brioche. Be patient.

INGREDIENTS
Dough:
1/2 cup of milk (warm)
1/2 cup of sugar
1//2 tbsp instant yeast
3 1/4 cups of flour
3 eggs + 2 additional egg yolks
12 tbsp of butter (soft) 170 grams
1 tsp salt
1 tbsp vanilla extract
1 lemon zest
1 cup of raisins
2 bags of earl gray tea
Icing:
2 egg whites
1 cup of sugar
2 tsp gelatin
Bake at 375F for 25-30 minute. The baking time will vary on the size and material of the forms.
