This is correct!!!! The cloves allspice and cinnamon are flavors I tend to dislike (reminds me christmas) but blended into the meat hot creates something great. Without these unusual flavors, I don't think it's actually a plate. And simmer for hours to break the meat down for the right consistency.

Another Rochestarian here. Raised on Tahou's garbage plates. I gotta say Sam, you did us proud! I make my own at home now since I don't live in Rochester anymore, and I do take some liberties myself to enhance the flavor, but keeping true to the original. Your mac salad looks epic and I like what you did with the hot sauce. Only thing you missed was a bottle of Frank's Red Hot to accompany the plate, otherwise great job!

Rochestetian here, former hots employee for 10 years. Hot meat sause has onions in it, and 3 spices. Laurie's seasoning salt, peprika and cyanne pepper. Hot meat sause juice is lard and water. We made 30 gallons at a time

Great stuff, we have McSweeney's Red Hots/Michigans up here in the North Country. On a Glazier's red frankfurter or (if you don't want to burp up garlic all day) on an all beef hot dog, New England style bun, bury the onions, with a line of mustard...

Traditional "hots sauce" is seasoned with cinnamon, clove, and allspice along with black pepper and a little cayenne. That being said, yours sounds dope

Best part of a garbage plate is that there are so many different varieties. Motz sticks, chicken tenders, BBQ, etc. Makes them fun to make becuase you can put your own twist on it!

My husband who is not a native Rochesterian is a huge fan of yours. He alerted me to this video. I am a native Rochesterian. I appreciate your take and what's beautiful about a GP is that you can kind of get creative with it. I'm a GP traditionalist...two burger patties with cheese and all the works, mac salad, home fries, mustard, and a squeeze of ketchup. Great hangover food! LOL! We currently live in Florida so seeing this put a smile on my face.

I went to RIT in 96/97 and that is the last time i had a garbage plate. I'm very excited to make this even though it has been so long I will not be able to remember if it is similar to Nick Tahou's but with two young boys and a 120 lb yellow lab I am all about food that can be shoveled. I bought Rochester plate spice from Stuarts spices in rochester so hopefully it comea out good! Thanks for doing this. True blast from the past that i think about every now and then.

I have a cast iron pan. It has Lodge written on it. It’s at least 100 years old. I inherited it from my nana when she died at age 99 in 1990. It still works great.

I'm from upstate NY and I have to say that 'the garbage plate' is sort of a regional thing up there but if you want a REAL regional specialty (which has been exported by IBMers reassigned to other IBM locations in the US), check out 'spiedies'. We even have 'SpiediFest' which is a huge cook-off, music and balloon festival here in Binghamton, NY in celebration of what has to be the absolutely simplest meal.

Very happy to see the garbage plate get some attention outside of Western/Upstate NY. I have driven many times to Rochester/Brockport just to get a plate and turn right back around. Spent more time driving one way than ordering and eating the plates. Henrietta Hots, Dog Town and Jimmy Z’s are my favorite spots. Z’s sometimes brings their food truck to Buffalo too.

Babish’s cookbook has the Touhou recipe , he grew up in Rochester. I lived there for 3.5 years and worked across the street at Nick Touhou number one. Interesting fact during the Rodney King riot they had in Rochester only Nick Touhou’s did not get Windows broking out. It is that much of an institution in Rochester

The meat sauce is pretty close to the coney meat for hot dogs. Which you put a dog on the bun, a strip of mustard on the side of the dog. Add the meat sauce on top with some diced onion. So I have to try the meat sauce and the macaroni salad. Nice video.

We’ve watched your cooking shows forever!, I could sure use a garlic press. Was on our bucket list to go see the town of Rochester and then that was spoiled when Pancreatic cancer took his life.

My grandmother specializes in “garbage plates,” as in you just need to put every dish she cooks in the garbage. Everybody talks about how wonderful their grandma’s cooking is, while my grandmother could give you food poisoning by making toast.

A few things. First that mac salad looks awesome. But IMO less is more with mac salad for a garbage plate. However while most people would say the meat sauce is the most important part, I think the mac salad is what brings everything together.

Genny's best brew is the Spring Bock bear a seasonal brew that is only available in Upstate NY. I have had the genuine Nick Tahou Garbage Plate and it is worth the trip to Rochester. Zweigles makes great dogs and white hots, but I am loyal to my local Syracuse Hofmann's white dogs. If you get to Syracuse, try Hofmann's at the Heids restaurant and also make a trip to Lies and Steigerwalds Butcher Shop and get their store made German style sausages. The real deal.

Garbage Plate looks like any family gathering or picnic I've been too... only with different foods... It all gets piled on to one plate and eats the same... The "gotta try everything plate"... Your GP just needs a couple slices of American cheese across the top as well... loosen up those pants a bit and dig in... lol!
