This is a really good looking recipe. I just wish you'd cut them open at the end and let me see what they look like inside. Are they tough or soft inside? We just cooked pork chop 1 inch pieces (I don't know name of the cut ... "Thick Cut" wife says) by cooking them on the skillet. She cooked them by searing them, then simmered them. But, outside and edges were awesome, but the inside were so tough. So, maybe, your recipe will fix that and make them softer. Thanks for sharing and teaching us what you know.

These pork chops are so tender when cooked this way. They are fork tender and so easy to cut. I hope that helps.

Pork..cook slowly first and brown at the end. Opposition of beef.

yes of course, I think wine or broth would make an even better pan sauce. I would also add a pat of butter at the end to finish. Not the person that posted this but thought I would answer you anyways, hope thats ok. Happy cooking
