INGREDIENTS:
bananas 3
flour 00 240 grams
cane sugar 140 grams
butter 100 grams
eggs 2
baking powder 16 grams
baking soda ½ teaspoon
vanillin 1 sachet
ground cinnamon 1 teaspoon
grated lemon zest 1
salt 1 pinch
chocolate chips 80 grams
mixed dried fruit 80 grams
Mash the bananas with the elp of a fork to make a puree.
In a bowl, whisk the soft butter at room temperature with the sifted sugar, a pinch of salt, the vanillin, the ground cinnamon and the grated lemon peel, whisk until you obtain a creamy mixture.
Once the above has been taken care of, incorporate the eggs, one at a time, while whisking, add the banana puree, finally add the sifted flour, baking soda and baking powder, work with the whisk until you obtain a homogeneous mixture.
Add half of the chocolate chips and half of the coarsely chopped dried fruit, mixing with a spatula.
Transfer the mixture into a 25 x 11 centimeters plumcake mold, lined with parchment paper, level the surface and distribute the chocolate chips and remaining dried fruit on top.
Place in a static oven at 190 °C - 375 °F for 15 minutes, then lower to 180 °C - 355 °F and continue for another 30-35 minutes. If the surface tends to darken excessively, cover with a sheet of aluminum foil.
Remove from the oven, leave to cool and remove from the mold. place on a wire rack and leave to cool completely before serving.
