Having worked at a bbq joint, i feel compelled to add that there are different cuts of brisket, lean (no fat and dry), cutter's (some fat but up to the cutter to dictate how much you get which is what it looks like here), and fatty. Some places let you choose your cut, others just give you the brisket. Not to say this is the case or excusable for the restaurant, but just for information

The best bbq I had in Houston was from a guy with a smoker on his truck bed. The Bookity Bookity Boudain Man. I hope he’s doing well. He was really nice and made great food.

Franklins is great too, but you gotta get ppl that wanna go and are down to wait in line. It’s a cool experience IMO. Get some coffee at that one spot right by franklins. Chill and drink some beers and mingling with ppl there. The salt lick is all experience. I love the country vibe there. Bbq is good but def ain’t the best.

I don't know who recommended the restaurants you're going to, but I've only heard of like 2 of them...they're hardly the best Houston has to offer. I'd eat Pappas BBQ before that and they're average at best most days. Although their breakfast tacos are the best.

Best Texas BBQ in general is Terry Blacks or Franklins. In my experience anyway. Terry Blacks because everything is basically as good as if not better than Franklins but you don't have to camp out overnight at Blacks

You haven’t been to any of the great BBQ joints in Houston yet. Brett’s near Katy Mills is my favorite but…I am wondering if you were asking for the moist piece of the brisket. You gotta specify moist or lean (I prefer lean because, I hate beef fat). If you don’t specify, they serve you whatever slab is up ready to be sliced.

I see that you visited places that were probably recommended by non Houstonian. You need to speak with native Houstonian who can recommend Houston hometown staples. Did you go by the French Fry House? Cool Runnings, This Is It Cafe, just to name a couple of spots.
