The additional feedback I would leave here is: There was a slight issue with having some Drippers stay level on the Paragon Dripper. This was discussed with the Nucleus Team. The Hario V60 Plastic and ceramic both have small ridged lips at the base of the holders - and this stops them from sitting flush on the top of the Nucleus Paragon's mount.
I hope this will be adjusted in the following iterations of the Paragon.
Also note: In the video you see three levels all swung out away from the stand. In order to achieve this - I had to place two small pieces of blu-tac to the base of the Paragon. It will not stay upright with all three levels swung away from the base - if you still have the dripper and rock in place. Without them - it's fine.
In using it many times - there were accounts when in moving the Rock away - it would dribble some remaining brew onto the counter or scales - and I had to wipe that up. There is a knack for moving it out of the way, without dripping on the bench.
The coffees that I tried ranged from all types of origins to roast levels (this comes across with trying different roasters) - in all there wasn't a particular coffee I did not enjoy - however, as mentioned in the video - you have to discover a recipe that works for the coffee first - get it tasting right - and then once dialled in - you can utilise the additional rock to enhance the flavour of the coffee. I would suspect though - with more and more people experimenting with this - there will be further ways discovered to manipulate the method and increase the performance of rock in enhancing the brew. I brewed with the Paragon on the suggestion from how Sasa Sestic, the owner, does it.
