How about a video making pulled pork by butterflying the pork shoulder to make more surface area for barky goodness? I'd be interested to know how it affects total cook time as well.

Oh damn…I love that. Never even thought about it. I’ll add it to the list. May be a better way to smoke a boneless shoulder since I feel like the lack of bone makes smoking them the traditional way too long.

I just cooked 40 chicken thighs yesterday on the offset and same thing skin wasn’t crispy but was bite through. So hard to get that on a smoker. But as you say god damn they were good lol. Nice video bro

I find the problem is they cook way too fast while you're trying to crisp the skin and you don't want to overcook them. But this butter method definitely helped. Glad you enjoyed it!

@@FattysFeasts I’m gonna try that butter mix on my next set. I spray mine with duck fat it helps some but I’m always willing to change it up for more flavor as well

Using it today for a brisket! Honestly, I don't use it for chicken. That's about the only thing. I'm not really sure why, but I'd rather just throw the board covered in chicken crap right in the dishwasher. Pizza is on my list. I gotta do that soon actually so thanks for the reminder!
Is there a specific reason you add apple cider vinegar to the bbq sauce

Two reasons actually. First, I like a little more tang in my sauce. I try to cut out the sweetness a bit, so I'll even frequently mix sweet and spicy sauces. Second, I like to cut down the viscosity. I thicker sauce is more difficult to dunk things in or sauce in general. I find thinner sauces make quicker work, especially if you have a lot of meat.
