So what I'm noticing is that Chinese cuisine is about the quickness and sauce. The food is cooked using the quickest methods and the main flavor component in every chose dish is some sort of thick sauce that covers whatever it touches which is why alot of Chinese dishes don't really season the protein or veggies much before cooking since it will be covered in a thick sauce which will flavor the the final product

This is probably one of the most delicious things on the menu at many places. The mall uses ketchup, sugar, garlic, and orange juice. Fry tye ketchup in a little oil add the sugar, once blended toss in the chicken and then it's mixed quickly adding in the oj. Garlic paste works best 😊. Yum. This is one srep off general TSOs thats just ginger paste and crushed red pepper and if you're into "crazy" add some chives.

The original Chinese recipe called for dried orange peel, but it was supposed to be orange beef. There should’ve been more spices in the batter and corn starch in the beef. Use dried orange peel with dried chili peppers, orange peel, and green onion stalk to cook out the flavor. Soy sauce, Sugar, vinegars, and peanut oil bring out more flavors. My version is more of a sweet, tangy, sour, and spicy crunch beef.

There should be some dried chile peppers in the orange sauce - as in California it has some heat to the sauce. Not sure about the rest of the US - but when I worked in Virginia, many of the Chinese food I was use to in California was different and the Chinese restaurants had other dishes I never saw in California.

I live in California and have never seen chile peppers in the sauce. Each restaurant surely does things their own way. Some restaurants in CA (and all states!) use chiles, some don’t.

@@mandyheart8754 Well most Chinese Restaurants I’ve been to in Northern California (San Francisco, Berkeley, Monterey, Sacramento, etc and more) have had chiles in the orange sauce to a ratio of 4 out of 5 - I lived in LA for 8 years but I rarely went to Chinese places there the last Chinese Restaurant I went to in Southern California had spicy orange sauce

Panda express 1/2 the time is old from setting in the warmers... one time they ticked me off, cause i was sick of it never being fresh. I looked up "mock recipe" for their orange chicken... combined it with a general tso's 7/10 on the heat, real orange zest... oh my goodness, it was amazing!

Used to work at Panda Express, they actually use a little orange extract for the sauce, but it’s mostly vinegar and sugar. I’m sure using orange juice to substitute the extract and vinegar would turn out a lot better

The best orange chicken in the world was made by a place in Oceanside CA that closed down because of the pandemic. They would use actual orange juice from their own trees they cooked down into a syrup and it was absolutely fucking amazing. Everything else on the menu was kinda meh but the orange chicken was amazing. RIP to the Mandarin.
