Hello everyone! Today I present my version of cold pasta, a fresh and flavorful dish perfect for summer days. This recipe is for two people, but you can easily double the amounts if you have more guests.

✅ Ingredients (for 2 people):
- 180 g of short pasta (I chose penne)
- 2 red bell peppers
- 100 g of yellow cherry tomatoes
- 2 carrots
- 1 celery stalk
- 1 chili pepper
- 80 g of tuna in olive oil
- 100 g of soft cheese, cubed, like Emmental
- 30 g of pitted green olives
- Mayonnaise (I’ll post a video on preparation soon)
- 80 g of grated Parmigiano Reggiano
- Salt to taste
- Pepper to taste
✅ Preparation:
▶️ Wash all the vegetables thoroughly.
▶️ Bring water to a boil in a saucepan.
▶️ Peel the carrots and dice them.
▶️ Dice the red bell peppers, removing the inner white parts.
▶️ Clean the celery stalk, removing the strings, and cut it into pieces.
▶️ Halve the yellow cherry tomatoes.
▶️ Halve the chili pepper and then cut it into pieces.
▶️ Salt the boiling water and cook the pasta al dente.
▶️ Drain the pasta and cool it under cold water.
▶️ Transfer the pasta to a large bowl.
▶️ Add the chopped vegetables and mix well.
▶️ Add the grated Parmigiano, diced cheese, olives, tuna, and pepper.
▶️ Mix everything well.
▶️ Add mayonnaise to taste and mix again.
▶️ Plate and serve your cold pasta!
✅ Tips:
- You can replace the short pasta with another type of your choice.
- If you don’t like chili peppers, you can omit them or reduce the amount.
- If you don’t like or want to use mayonnaise, you could also use plain Greek yogurt, cottage cheese, or even light spreadable cheese, if you prefer.
- You can add other ingredients to your cold pasta, such as corn, beans, or black olives.
- Cold pasta is perfect to bring to the beach, on trips, or to the office.
