here are a few more tips:
*when you are frying, the sides are the first ones to turn brown. always scrape off the sides of the pan. mix as often as possible for a more even color.
* even after straining, i still use a paper towel or two to absorb excess oil. just line the container with it before putting the freshly fried garlic. you can remove this the next day
*at times when i like to keep my crunchy garlic soaked in garlic oil, i dont strain it anymore. i transfer it in a container with the same oil i used to fry the garlic in. in this case, I only use canola oil :)
