Chocolate Mug Cake Recipe
Ingredients:
6 Tbsp. almond flour
1 Tbsp. plus 2 tsp. Coconut sugar
1 Tbsp. plus 1 tsp. Cocoa powder, I use Guittard Cocoa Rouge
¼ tsp. Baking powder
¼ tsp. Salt
3 Tbsp. milk or milk alternative
¼ tsp. Vanilla
1 - 2 Tbsp. of Guittard milk chocolate chips
Directions:
Add all the dry ingredients to a mug and stir thoroughly to combine. Then add the wet ingredients and stir until all the dry ingredients are moistened. Add the chocolate chips and stir. Add a few more chips on top.
Place in a microwave and cook on high for 30 seconds. Take a look and then put it back in the microwave for another 20 seconds. Keep repeating this until you can see that the mug cake is cooked in the middle. It shouldn’t take more than 1 minute and 30 seconds total.
You want to cook it in smaller time increments for 2 reasons:
It’s less likely to boil over in your microwave.
You are less likely to over cook the cake.
Tips:
You can sub in different sugars if you wish. Brown sugar and white sugar work in. Use the same amount as the coconut sugar.
If you want to use a liquid sweetener such as maple syrup or honey, reduce the milk by the same amount.
You can use almond milk or any other milk alternative instead of cow's milk.
