We made this smoked turkey on our Traeger grill yesterday. It came out so amazing! However, my husband adjusted the temp and started low and slow at 200 for an hour to get a good smoke and raised it to 375. It took 4 hours for a 14 lb turkey but it crisped up beautifully and had incredible flavor. I think the brine, the flavor injection, and the rub are so important to the result. We are not big turkey fans and this came out so delicious that we will be making this again and again. Thank you so much!!

Great video! How come you go straight to 350 for 4 hours approx time? Why not smoke low and slow for a couple hours and then crank it?

You definitely motivated me, to get this posted quickly… You can certainly start out at a lower temperature, I would suggest 225° for a couple hours like you said. This impart more smoke flavor… I tried to keep this recipe simple, and time efficient for how busy the holidays can be. I plan to post a different turkey recipe each year, looking forward to it!

Ryan, great video it was clear and informative. This will be my first turkey smoked on the Traeger but will probably smoke low for the first two hours and then finished at 350 degrees for the remaining time. I complement you on your tidiness and the background music.

OK so I did everything that you had in your instruction however I injected mine after about 12 hours in the fridge and I’m leaving it injected overnight to put it on the smoker tomorrow I have also seasoned it I’m assuming there’s no problem in doing that that’s how I do all my beef as well any problems with that?

Should be fine Jeff, sounds great! If you did a wet Brine, and then you seasoned it and let it sit longer, it’s basically a double brine. It might come out a little salty, but it will definitely be tasty! I’d love to hear how it goes…

Followed this recipe for thanksgiving last year and it was 10/10. Everyone loved it, it was devoured. Did it again on Christmas and since it was -10° out, I just did it in the oven (instead of outdoor Traeger) and it was still amazing. The butter maple injection really is key. Made this last year and it was better than I could have ever imagined! I had to come back and double check the recipe and method before I try it again this year. For people who are cooking this for a lot of people and are nervous they may mess it up, I did a practice run on a whole chicken a few weeks before just to be more comfortable. That was also the best chicken I've ever had.

Hey Chad thanks so much for watching the video and for the kind words. I did not add any oil, but after applying the butter injection, I just rubbed any excess into the skin. It acted as a binder. As for the drip pan I did not add any water, but there was a ton of liquid that dropped down and I was able to incorporate that into the gravy here is the link for that recipe: kzitem.info/news/bejne/w66K122MiZ2gapg

I did this and it was amazing!!!! I’d add photos but not sure how. So I roasted my 15lb bird at 225 for 3 hours, cranked to 300 for 2 hours and finished the last 1 1/2+ hours at 350 to crisp up the skin... after a 20 min rest I did hit the broiler for 5 min to make sure it was nice and crispy... OMG it was soooooo good!! Thanks for the great recipe man!! On a side note is used a 3 to 2 ration of Target Pecan pellets and Maple pellets on my Pit Boss Austin XL

Wow 😲 that’s a big bird! Yes you could pretty much double the brine recipe, and if you don’t have room in the fridge I would suggest keeping in a cooler with ice to keep temp below 40°f (danger zone). You could also def extend the brine time it wouldn’t hurt but nothing more than 48 hours. Good luck and keep me posted on the result 💥

RYAN, I followed your Turkey recipe perfectly this thanksgiving. It was awesome!!! I live with the fussiest eaters and they went crazy over it! Only difference is I used a Camp Chef with apple pellets and I heated up my Traeger Pork and poultry seasoning in some warm water to get it through the injector. Time too try a new RYAN recipe, thanks again!

YES Brother! I brine every whole chicken that passes through my kitchen, and would not let a Turkey go through the Turley treatment. haha! Best not to disrupt the boss. You can definitely take out the onion. The brine and the stuffing can be adjusted to your liking. Maybe add a whole apple, sliced to the brine? Keep me posted!

Yo David! Yes I absolutely love the Meater+! I got one for my dad for fathers day and he loves it. I'm hoping he returns the favor for xmas haha. The only thing I noticed was the ambient (grill) temp usually registers about 10-20º less than what my grill shows. But the internal temp was spot on! Let me know if you pick one up, and how you like it!

Wow! That’s a big bird! Yes I have done this and it doesn’t change the the cookbook time much at all. Just always check the temp (160°f) in the biggest part of the breast to know she’s done ✅

I'm going to make this at Christmas this year. I did one at Thanksgiving on my Traeger and it turned out great, but I didn't inject the meat or brine it first.

Ryan, Thank you for making this video. The recipe is great. I have made this Turkey for the past two years. All the guests tell me it is the best Turkey they have ever had. I use the Kosmo Turkey Brine which works very well.

This looks great. I will try it out this year. How many pounds was this turkey? Did you use a method to figure out the amount of salt and brown sugar you used? Or is that amount ok to use for turkeys weighing 12-18lbs?

Thank you! Hope you try it! This was a 13 lb bird. and I think this amount of brine ingredients is perfect for any bird 12+ lbs. If it's massive, you can always bump up 1.5x or so.. Gobble Gobble!

How big was your bird? I have a 22lb and am trying to get an idea of how long it will take at around 300 degrees. Any advice would be welcome.

350° for about 3-3.5 hrs. Plan for around 15 min per lb. I pulled at 160°f in the breast for a finishing temp of 165° after carryover cooking.

Definitely one of the better turkey videos I've seen. Some say to cook at 300°. Some at 3:25. But it's all super fun. A little subjective. And we all tweaked it to make it our own. Do you feel the injection was a little salty? Or just perfect? Cheers brother. Happy holidays

Thank you bro! Yeah I find with poultry I prefer a higher heat to get a crispier skin. On my spatchcock chickens I smoke low and then crank the heat to get a good, crispy skin. I did not find the injection made it too salty, but you omit the rub and use unsalted butter if you want it less salty. Appreesh and Happy Thanksgiving!

Watched the video at least four times. Got the bird in the Trager. Video was great. Wife not to sure about smoking so she's got a 24 lb in the oven. Will let you know how. No matter what I will tell her that hers is the best. Happy wife.

This is very first time smoking a turkey, and I have to tell you I am so ecstatic I opened your video. My turkey was close to 18 lbs. so it took a little longer and the top of the bird just cleared my junior Traeger. I'll go smaller next time, but it was absolutely delicious, moist, and the best smoked turkey ever. Your recipe is a keeper! Thank you,

Great Video.. I will be doing this for sure! I reccomend that you wash the brine completly off and then dry it before putting it in to the fridge. It removes all the excess salt and sugar from the skin which could later conflict with seasoning

Yes, great tip! It is a matter of preference, but I do like my poultry to be salty. This turned out amazing, and the reviews have been so good! But your bird will still be super flavorful either way. Thanks so much for the comment and support Adam!

Ryan, just want to say a big Thank You! I used your turkey recipe and it turned out fantastic! Many rave reviews from the family like "you really out-did yourself"... "best turkey I've ever had" etc, etc. I spatchcocked it but everything else was pretty consistent with your recipe. I didn't have a low-profile aluminum pan to catch the drippings, which didn't make for the perfect gravy but next year I will find one and get the turkey recipe down as well. Yes if it is already brined, I would not double brine. Check to see if salt is already added, if so, skip it! Happy Thanksgiving! 🦃

Hi Ryan! Looking forward to making this for thanksgiving next week. At 350 how many minutes/hours do you recommend cooking per pound? We have a 20lb bird so I know it will take a while

Hi Grace. The general rule is 15 minutes per pound. But always cook to internal temp. So plan for 5+ hours. Happy Thanksgiving to you and yours!

I'm also smoking a 20lb turkey on my traeger and have been so scared of all the recommendations of not smoking a bird this big due to bacteria in the 40-140 deg zone. Would it be safe to smoke at 350 to avoid this issue

Yes you will be fine at 350-400°f cooking temp. I have cooked dozens of briskets that were 20 lbs for 15 hours at a much lower temp with no issues. Cheers!

Hey Timothy, yes I would definitely add more/double the amounts I shared. Depending on what your brine container is, you can add more water to ensure the bird is fully submerged. Good luck and enjoy!!!

Best smoked turkey I have ever made. A family friend that doesn’t like turkey but was famished and had some. He said , “ I don’t even like turkey but this is awesome”. Everyone loved it. No left overs to worry about or even enjoy. It was devoured.
