If it’s over proofed, bake it in a parchment lined loaf pan. It will still taste good and be a nice shape for sandwiches.

I am confused with this method. Practically and in many videos this dough classifies as "respond quickly and leaves no indentation" therefore underproofed. When I bake such a dough it is really under.

I had the same problem. Something that helped me was to also look at how shiny, jiggly and bubbly the dough is. For the poke test I also heard, springs back slowly and leaves a small hole. So you make big poke and if it's slowly almost-filled it is ready.
