When the temperature rises at the outlet of the evaporator, the thermostat opens more flow on the inlet side. The evaporator is getting colder. If the temperature at the outlet of the evaporator drops, the thermostat will reduce the medium flow through the evaporator.

This is a great video, it tells a lot to those people who have already some background in the topic but need further information about the details. In fact this is a much better video than those hundreds titled "How A/C works in your car".
