This is the quickest tikka masala you will ever make, and the secret is 1 single magical ingredient. No, I'm not talking David Copperfield magical, I'm talking canned tomato soup magical. A proper chicken tikka masala is a delight, it really is. Marinating the chicken in yoghurt, plenty of aromatic spices and the charred grilled chicken adds a bunch of flavour. BUT, it requires time. So if you want a curry in a hurry, and you need your tikka fix right now! I got you covered, don't worry.
For this recipe I used chicken thighs, because they are cheaper but they also have bags of flavour. You can of course use chicken breasts, it's fine. I just find that for quick curry recipes like this quick chicken tikka masala, thighs just add that extra bit of flavour.
Now I don't claim that this version of chicken tikka masala is authentic, but listen, sometimes when you need your fix, you have to make some shortcuts right?
To make my cheats chicken tikka masala you will need:
Serves 2 with rice or roti (chips as well but don't tell anyone!)
►5 or 6 skinless boneless chicken thighs
►1 medium sized onion
►2 tsp of ginger garlic paste
►2 tsp of garam masala
►1 tsp of ground coriander
►1/2 tsp of turmeric
►1/2 tsp of chilli powder
►1 tbsp of tomato puree
►1 x 400g can of tomato soup
►Small bunch of chopped coriander
►Vegetable oil or ghee for frying
►Salt to taste
