I was actually adding pasta water to the tomato sauce this entire time not because I knew it would enhance the quality of the sauce, but because I was just too lazy to go to my fridge or sink to get water. It was always easier and more convenient to just scoop some pasta water from the pot since it's right in front of me.

They taste better because we use an abundant amount of cream &/or butter. Dry pastas are usually cooked ahead of time, than dropped to order in a water bath that we just keep adding water to and there’s lots of starch builds up.

I make mine from scratch at home. Store brands have a lot of sugar. My spaghetti sauce is very simple and I let it simmer in a slow cooker. Onion celery and carrots minced olive oil Sautee with a sprinkle of kosher salt. Add burger and cook until done. Once cooked place in slow cooker with tomato sauce. Per 15 Oz of sauce 1/4 tsp each of oregano basil thyme and Parsley, 1/4 tsp salt garlic powder or fresh 2 cloves smashed. 1/8 tsp onion powder a bay leaf and black pepper to taste. Add 1 tsp of lemon juice. Simmer on high 1-2 hours or on low 4 hours.

Actually, I'm not a fan of most (not all) restaurant marinaras. They are usually either too bland, too salty or too acidic. I also do not prefer to have the pasta mixed with the sauce before plating. I'd rather have the sauce placed on top of the pasta and consume it in ratios I prefer. That said, I have to admit, that I don't care for 95% of restaurant food. Most times I feel I can do it better myself. Of course, I can't come close to an exceptional restaurant, but most restaurants are not exceptional.

Used to work at a fancy 🇮🇹 restaurant in Montreal 🇨🇦 and they put butter in the sauces Felt bad for the customers! Paid $35 for a Barilla🍝 that almost cost nothing to make 😂

I love how it ends by saying homemade sauce is better and healthier than store-bought jarred sauce. It is like saying eating a potato is healthier than eating a rock. When has anyone in history ever said that store-shelved food was healthier than homemade?

nope. start cooking with some good quality 'passata', at home... keep it simple, use good quality ingredients (pasta included), and 9/10 times your food will taste better.

Restaurant quality ingredients can be hard to find. But sometimes, they are available, but in a size that is WAY too much for a home cook. For example, extra heavy mayonnaise is delicious, and used in many restaurants, but you can only get it in one gallon containers. I've tried to get Kraft and Hellman's to offer a smaller size jar of extra heavy mayonnaise, but they refused. They offer light versions, canola oil versions, and other versions in smaller jars - so why not extra heavy mayonnaise ? They are leaving consumer money on the table with their stubborn refusal to offer this mayonnaise in a reasonable size.

Some restaurants use local, specialty purveyors for harder-to-find ingredients. Those purveyors sometimes carry common restaurant items in smaller sizes. I used to live/cook in Newport, RI, and there’s a co called Newport Specialty Foods in Middletown… Long time ago, but I rememberer them having qt-sized jars of heavy mayo.

Add a spoon full of korean gochujang paste to the pasta sauce (a can of diced tomatoes and a can of tomato sauce, no store bought pasta sauce). It will add umami and spicy tastes to the sauce.

I have to disagree. I have Italian friends who are excellent home cooks, recipes passed down through generations, and shared (to a point) you can't expect them to just give away their secrets! I'm not Italian, but I like to tweak Marcella Hazan's simple method. I also have to say that like in this video, I would never use a cast iron pan for sauce. Way too hot, What a MESS!

Said almost no Italian ever! I never order a tomato based pasta dish at a restaurant. They've alway been a disappointment. Well, maybe only at a restaurant in NYCs little Italy or my grandparents' Italian neighborhood in Queens. I'll stick with seafood pasta, linguini with clams, if I find myself at an Italian restaurant.

I stopped buying sauces. San Marzano tomatoes are what my daughter's restaurant uses for their homemade red sauces. And for the cost of a good sauce you can make it at home for same price and its so much better. Same for cream sauces.

In a word, my ragu sauce is way better than moat restaurants. My marinara is better than most restaurants. And Olive Garden is NOT real Italian food. Seriously, the idea to dining out is a once in awhile thing.

Took home some fettuccini from a place a while back. As the fats separate and solidify in the fridge, when I went to heat it up the next day it was more like a soup of butter with pasta. I could not believe the butter amount, and yes I understand butter is one of the main components of an alfredo, but still, it was BAD.

A quality fish sauce, such as Red Boat, is an excellent substitute for fermented anchovies because all it is, is fermented anchovies and sea salt. Be careful and only purchase quality fish sauce, such as the aforementioned Red Boat.

@@DietBajaBlast Compared to Red Boat, Squid brand is well down my list. The closest to Red Boat in quality is Thai Kitchen, which is the only brand I will buy other than Red Boat. Here is a quick comparison test of fish sauces which clued me in to the quality of Thai Kitchen and got me to try it. I was already using Red Boat and had tried Squid which I believe I tossed out almost immediately.
