A rack doesn't hurt, but for those of you waiting to get a rack before you try this.. just go for it! It turns "meh" grocery store steaks into something really good. We dry brine steaks all the time for big "cook-outs" in just in a stainless steel prep pan. We salt the meat all sides, then place it in a shallow pan covered tightly with foil. No rack. The moisture still comes out ... and the salt solution is then re-absorbed either way- I guarantee you will not be able to tell the difference. If you're going to grill for dinner - salt them at lunch time and leave at room temp, sealed up w foil. If you're going to grill tomorrow - do the same thing but put back in the fridge after about 2 hours. That's the point where the salt solution will start to be re-absorbed.

For those that do this, this method is called dry brining. Be careful with how much salt you add, trust me, you do not need a lot. Do not be "liberal" with the salt, put a very light coating across, and let it dry brine for an hour, this makes a noticeable difference once they are cooked.

Depends on the kind of salt. For a fine sea salt, I'm with you. For a kosher salt, you'll need more. It's hard to over salt a 1.5 to 2 inch thick steak.

It's also good to dry-age them in the fridge, on a wire rack, at the bottom shelf (to prevent exposed meat from affecting your other food). Different people have different times, but I would say the best is 8 - 12 hours for a reverse-seared rare steak. For medium rare, I would let it sit in the fridge for 18 hours before reverse searing.

True, but it’s not about making it juicy....the salt is drawn into the meat as it reabsorbs thus flavoring the meat inside as well as the outside…also giving the juices better flavor!……

I marinade my steakes in a lower sodium soy sauce. For like 4 hrs. Then top them off with minced garlic prior to grilling. Fantastic every time!!

You really can just add some salt when cooking, and they still turn out great. In fact, how well done you cook them probably has a larger end effect on flavor than salting them. I've cooked steak with no salt at all many times, and they still turn out fine. Usually when I'm doing that it's because I have a salty side I'm serving with them, or because I've made a spinach and blue cheese sauce for them(for example).

Not much fluid goes back into the steak. Pulling the water out makes for a good sear. There’s no need to wait for the water to evaporate. At least I didn’t hear him say you need to be at room temp before cooking.

Have to respectfully disagree with this method. I was salting the steaks just like it was described in this video for 35 years now. Then I saw one of Chef Jacques Pépin’s techniques and it truly is better. No salt is ever added until AFTER searing the first side of the steak in the carbon steel pan. Flip to sear the other side and then salt that side of the steak. Continuously basting with grass fed butter every 30 seconds or so. Add fresh rosemary and thyme into the mix. Sear the fat cap next then into the oven with the pan it all goes. Removing the moisture from the steak, never amounts to it being drawn back in. It’s evaporating more than being drawn back into the steak. So adding salt the right way and during the searing stage, makes for a more flavorful steak.

Salt it, leave it in the fridge open until it’s fully absorbed.pull it and season with your choice of seasoning and let it sweat on the counter. After 20 mins then you can grill it

100% incorrect. I worked in a Steakhouse as a steak cook and can tell you that you really don't want to salt your steaks too soon. Season your steaks right before going on really hot wood fired grill. You need that moisture to stay in the steak as much as possible. Do you want a dry steak? Take your steaks out of the fridge about an hour before cooking. I still use the super secret seasoning recipe they taught me to use. It was so secret, they would kick me in the dry storage room while I was mixing recipe. That knowledge is locked in my brain forever.

The water does not draw the salt into the steak. The salt is dissolved in the water and diffuses into the steak via osmosis after a few hours.

This is categorically false. The salt draws moisture to the surface via osmosis. The salt dissolves in the drawn-out water, and is pulled back into the meat (again, via osmosis). There is actual research proving this process, and it would take you less time to look it up yourself than it did to type out something that is just plain wrong

Let meat out a couple hours before. Salt about an hour before cooking. The longer you let salt sit the more of a ham texture meat becomes. To me it’s not pleasant when it’s too long.

No. Truth be told the best way to make a steak is seasoning with everything except salt then finally once it is cooked and ready to eat, you throw some salt on top. That is the best way, the most flavourful way it keeps the meat the most juicy.
