THE SAIGON FLIP RECIPE: this is the “alleged” recipe from Hop Sing Laundromat, a speakeasy based in Philadelphia. it’s a rum based cocktail, and it’s a flip, a class of cocktails that’s similar to eggnog. this drink is reminiscent of an orange creamsicle, except it’s sparkling and boozy. creamy, orange, and super chuggable. to make 1x drink: 1/2 oz - licor 43 1.5oz - el dorado 3yr white rum 1/4 oz - lime juice 1 oz - Longevity Brand condensed milk 1 - Egg yolk Club Soda method: Dry shake (no ice) Wet Shake (with ice) Orange out/express served over a rock top with club soda batch make 10x drinks: 170g - licor 43 400g - rum 400g - condensed milk 70g - lime juice 10 egg yolks on the side club soda method: blend the batch cocktail with an immersion to emulsify per 1 drink - 3.25oz batch mixture + 1 egg yolk dry shake, wet shake, orange out, over a rock, top with club soda

But why do you batch by weight, genuinely curious. Seems like an unnecessary step when you are starting from a volumetric recipe and scaling up. Please, I must know if there is an actual reason

You can use kumquats instead of limes to make it more Saigonese. As you may not know “tra tac” aka kumquat tea is one of Saigon’s popular street food drink.

Top tier tip you can look this up to fact check me if you like. Orange peels have 2 oils. One is heavy and bitter the other is bright vibrant and light. If you express the peel slightly farther back the bitter heavy oil will fall below your hands and the light vibrant oils shoot out and mist your drink. Basically don't hold the peel directly over your drink when you squeeze it or rub the peel where your lips touch the glass rather rub below on the glass so you only smell it instead of getting a bunch of bitternesss on your lips.

Do you find that if you squeeze the lemon juicer little bit too forcefully it also squeezes the oil off of the Rhine and makes the lemon juice bitter? Or in your case, limes...

Why do you use weight based ratios for your cocktails? Different liquids will have different density so your ratios won't be accurate to the intended recipe.

good question, i weighed out the volumes of each ingredient in grams before, so the batch recipe provided is accurate when accounting for density. i did it since it's easier to batch larger quantities with a scale for me
