Meathead has a wealth of BBQ knowledge and a positive philosophy about what a cookout really is. I took his advice about cooking an 18 lb ribroast and got a compliment from my most criticizing BBQ friend!

I had that comment over the weekend! "Your chicken is juicy and pink". This is how a chicken should be! 160-165F and it's ready!

Yeah I get that too. I was always mad at my wife for not trusting me when she would see pink in my chicken thigh and and pop it in the microwave. I was indignant, like "All the studying I do on grilling? It's my main hobby the last eight years and she doesn't trust me???" Well then I see Meathead's own wife does the exact SAME THING to him, lol! Kinda makes me feel better.

Someone recently told me that Kenji Lopez-Alt says in his book Food Lab that it's scientifically proven that it's perfectly safe to remove chicken from direct heat at 150° F and let it rest for 3 minutes. After 3 minutes, the bacteria has been pasteurized and you won't get food poisoning. I know that you have said to remove the chicken at 160-165°. Which one of you are correct?

Point of order: Wood DOES absorb water. In fact, wooden boats are designed to account for the swelling of the wood as it takes on water. It just takes a lot longer than a couple days.

I know I'm a little to the party on this video but it should be pointed out that wasn't 9 hours and 58 minutes on that timer. It was 3 hours, 9 minutes, and 58 seconds. An oversight on his point and it doesn't change the point he was making though. Still overall good video with great information.

Love the book, tv show and website. Didnt love this presentation. He kinda comes off as a sleazy car salesman pumping his book. He needed to see the google talk as something more than just a chance to hawk his book to the people in the audience.

A lot of this is down to personal taste. I like grill marks because it means their are different flavours, a totally grilled side means you have only one flavour, but this is food and so each person prefers something different. This is why the various arguments around food are a complete waste of time.

Oh I wouldn't consider it a waste. It's fun in a hobby kind of way. Shared interest for folks. But to your point of grill marks.. I love grill marks too. But I also love near-maximum flavor. So I split the difference. I get my grill marks on the one side, what will be the presentation side. Then after flipping it, and at the end of doing the second side, I create a controlled grease fire flare-up and Pittsburgh the hell out of that side. Serve it grill marks up. Best of both worlds.
