I think there are few people in the world who don't like muffins. After all, they are so loose, with a golden crust. Today we will prepare muffins with spinach and cheese, very rich in taste. The recipe for muffins with spinach will be without milk, we will add sour cream to the dough. And that richness of taste of a dish will be given by firm cheese Old Dutchman KOMO. Very tasty for breakfast!
Portions: 6 pcs. depending on the diameter of the silicone molds

Ingredients for muffins:
120 g of softened butter (+20 g for frying spinach)
1 st. l. sugar
3 eggs
50 g of fresh spinach
120 g of wheat flour
10 g of baking powder
3 st. l. cream 15-20%
100 g of hard cheese Old Dutchman KOMO
1 pinch of salt
Step-by-step recipe for muffins with spinach and cheese
Let's cook spinach. If you use frozen spinach, you must first thaw it and squeeze excess moisture very well with your hands. I used 50 g of fresh spinach. Heat a frying pan with 20 g of butter and fry the spinach for 2 minutes until soft.
Add 120 g of softened butter and beat 3 eggs, add 120 g of flour, 1 tbsp. l. sugar, 10 g baking powder, 3 tbsp. l. sour cream with a fat content of 15-20%, 1 pinch of salt. Thoroughly mix the mixture with a whisk so that the dough has a homogeneous structure.
Grate 100 g of hard cheese Old Dutchman KOMO on a fine grater, it will give the dish a delicious taste of Dutch cheese.
Stir the cheese and spinach into the dough with a silicone spatula. Stir so that they are evenly distributed in the dough.
Silicone molds do not need to be greased with oil, because there is a lot of it in the dough. Spread the dough in the form of 3/4. Bake in a preheated oven for 20-25 minutes at 180 degrees.
