Glad it works for you guys! My experience is; mayo is oil. Oil on coals or a gas grill will cause it to flame up as it melts. Do what I do and brine your chicken for two days. For one whole chicken use a half cup of canning salt or kosher salt. Bamm!

Whoops, place your roaster in a 5 gallon bucket and put enough water in it to cover the bird. Keep adding cubed ice to maintain a chill of 34-44 degrees

@@kurtglo Not that brine is expensive, but to use less brine, put the brine and meat in a garbage bag, get ALL the air out and tie it shut (without letting air remain in the bag). Put in the fridge to keep cold. Very little brine and 100% coverage, inside and out. 😎👍

After years of watching man great family members grill and also the few years I've grilled, I have to say salt water brine is simple and effective, also good for other meats as well. Have never tried mayo for a coating, but I might try it just to see the results.

I hate mayonnaise. I would never have tried it. But I got bored and gave it a try and I had awesome results using mayo. Very moist!

Same for me I hate mayonnaise I hate the smell of it I gave this video a shot and I never had moist chicken like this before my family loved it I will always use Mayo for my chicken on the grill

My mind is stuck on how is the skin? Crispy? With the excess moisture is that being locked in with the mayo? Like a lot of others I would love to know the temp and time etc

I use the mayo rub technique when i cook my thanksgiving turkey! For anyone that doesn't like mayo, you don't taste the mayo when you cook with it like this :)

Makes sense, mayo is pretty flavour neutral so won't colour any flavours added to it or the chicken and it's basically an emulsified oil that sticks to the meat, I'll give it a try

I don't understand how adding an oil (mayo is just basically oil) to the outside will keep a protein from releasing moisture when cooked. The oil will melt and drip off, the meat will sweat and contract and release 33% of it's weight in moisture. The only thing I can see helping it maintain it's moisture is by brining with salt water or phosphate

Nah I'll tell you from experience somehow that mayo does the trick. I've grilled whole chicken, quarters and boneless breast (skin on) I put the mayo under the skin, some olive oil on top and have always had consistent results. I've also done it without mayo and it makes a heck of a difference but all folks got different strokes. Good cooking to ya 🍻

Ppl please sont try this. Mustard acts as a great bond but on beef and pork low and slow cooks. If u want to keep it moist just use a small water pan underneather your chicken and set it to indirect cook. Cherry wood i think its the best to uae on chicken and givea it a beautiful flavorful color.
