Nice technique. I usually let the oven do most of the work, I do the aluminum foil thing but while it's in the oven at the same temp. At the end I turn on the broiler in the oven to char or crisp it up. My family likes the drippings for gravy. Great video, I might give it a shot.

Your roast shouldn't wobble when you cut it. It should be firm on the outside and pink the further you cut into it.

The reason I sear a steak is to keep the juices in before it's cooked, The sear or bark creates a barrier so he juices don't flow out.

Always one awkward person who has to do it differently. You are still doing the same job no matter which way you sear it. If you sear it first, then you can collect any juices and make a gravy or as a baste for the roast. Oven cooking it first then you do not get anything to baste with until later.

Meat was overdone, knife was blunt and tried to do too much with the meat. Salt, pepper, MAYBE mixed herbs(seasoned a day before) half hour at room temp, 160°c for 2 hours in the over, perfect medium rare. Season to liking

If you did that, the technique would be braising, which uses some liquid that you keep topping up as it evaporates away. This is a method best for tougher cuts and long slow cooking. Adding too much liquid too soon will result in a 'boiled' meat. Definitely not a technique for a classic roast beef.

You said 300° , but for how long? If you sear it ? I recommend you use EXTRA light virgen olive oil , gives a better flavor, rather than using the heavy green olive oil . 😎

You have to pull it out early because if you took it out at 125 which is medium, it would have reached too high a temp when you seared it :)

A big piece of meat needs 3-4 hrs to get to room temp prior to cooking. Also at end after rest throw under broiler for crust.. no need to smoke house.. She doesn’t cook much

I know she meant well, but I could not find much she didn't do wrong, including the oil. I am amazed on how many who chose to use oil, It has to be 99% of all but the best product is in fact Palmin, it is refined coconut oil but with no taste at all. Oh, and do it in reverse order of her and wrap the roast completely in foil and use low heat for a couple of hours or three. :-)

yup, definitely raw. would walk out of restaurant if they tried to serve me this. Now I'm looking at the thumbnails on the right and I see video by T-ROY COOKS and his roast beef looks even more raw then this one wow, the only video Ive seen so far(only been looking for past 2 hours) that shows a proper cooked roast beef is this one. This is a perfectly cooked joint of beef, it should just be pink throughout the inside. If it's brown or grey the meat is ruined and inedible. Anyone who says otherwise probably orders their steak 'well done' and eats it with ketchup like a man baby.
